Default What was for supper??

We're having Thai Chicken salad! Mmmmmmm!

Here's my "recipe"... I don't really have portions, I just throw it together.

1 chicken breast per person, grilled and sliced
romaine lettuce, torn
red onion, sliced thin
green pepper, sliced
carrots, sliced or julienned
cooked rice vermicilli noodles, cooled
sweet red chili sauce (I use Thai Kitchen)
~ just assemble lettuce & veggies on a plate, top with some noodles, the sliced chicken breast. Drizzle with sweet chili sauce.

We're having grilled trout, probably a salad, & either grilled/steamed potatoes or pasta? not really sure yet.

we had salisbury steaks (ground beef, onions, egg, s&p, crushed up crackers all cooked in a skillet and then smothered with brown gravy), green beans, and fresh watermelon. it was DYING for potatoes but dh and i both try to keep the carbage on the low side.

laura- that sounds yummy! Im going to have to give that a try sometime!

We had a very healthy dinner of taco bell! DH is gone tonight and I didnt feel like cooking so the boys chose taco bell.

Crunchy Lemonade Chicken with some garlic green beans and potato chips. Maybe some salad--I'll find out as soon as I get to the kitchen.

I'm a terrible mom. Granted...it's only 6:15 out here in the west, but we have no plans. One of my guys was starving, so he just nuked himself a few corn dogs, the other was chowing down on some chips and bean dip....and then we'll probably go to Carl's Jr!! LOL!! My boys told me their Teriyaki Chicken burgers are good, so I'll give it a try.

I'll try to plan a meal for tomorrow!

We had country style ribs that were cooking in the crockpot all day and salad topped with hard boiled eggs and bacon.

Angel hair pasta with marinara sauce. I desperately need to go grocery shopping but can't go til Friday and that was about all we had in the pantry to fix!

Dinner?! Acckkkk! I was watching Dallas and scrapping ... they all kinda reheated for themselves tonight ... have a LOT of leftovers so they didn't starve. LOL I spent a lot of time with my niece in the past 6 days and it really hurt my scrapping for points.

I need to get back on the lower carbage wagon again, but alas, it was just me tonight so I ate your baked potato loaded with the works (the toppings were pretty low carb. LOL!)

We grilled Dr Pepper ribs (from the Cook This, Not That cookbook) and burgers on Sunday night, so hubby has been eating on leftovers all week YAY for not having to cook!!!

Last night was leftover delivery pizza & beet & carrot salad. Tonight will be sandwiches and more beet & carrot salad (didn't realize the recipe made quite *that* much).

DH is working 16 hour days this week & it is too hot to turn the oven on.

Last night it was just the kids and I so we had turkey franks and oven baked fries. Tonight we are having Homemade Sloppy Joes (made with ground turkey), grilled corn on the cob and homemade potatoe salad!!
