Default any ideas?

my little neighbor man brought us over a TON of tomatoes and carrots from his garden yesterday. what are some things i could make with them? i already have a roast thawing to make tomorrow in the crock pot, but, i'm sorta at a loss for what to do with the rest of them....

beef stew, tomato sauce or soup... you can always blanch the carrots and freeze them so you can use them later. I got a ton of tomatoes in my garden this year, too, and I've made sooo much tomato sauce with it (I actually have another big batch to make tonight)

This stewed tomato recipe is so good! It calls for canned tomatoes, but I bet you could look online and find out how to substitute fresh for canned.

The recipe calls for 6 biscuits to crumble into the stewed tomatoes. When I make it, I just use Heart Smart Bisquick and milk to make drop biscuits--the recipe for that is on the Bisquick box.

I've been making homemade stewed tomatoes - I don't really have a recipe though. I just chop up my tomatoes and put them in a pot with some chopped up onions and a few cloves of garlic chopped up. Some salt and pepper and a bit of honey to offset the acidity (you can use a bit of sugar if you prefer). Cook them down until everthing is tender. We love them over some WW pasta for a quick lunch or side dish at dinner.

As for carrots - carrot cake, carrot muffins, shredded carrot salad, puree them and put them spaghetti sauce, chili, carrot soup, and I make a peanut soup that uses carrots in it too. If you'd like any recipes I'd be glad to send them to you

Stuffed tomatoes (if they're big, put tuna salad/chicken salad or cottage cheese inside and eat as is), salsa, quesadillas/tacos/other Mexican goodness, spaghetti sauce, chili...

The guys in the house don't eat cooked carrots, so no ideas for you there.

Oh and just sliced tomatoes with lemon pepper on them or just salt and pepper are a great, healthy snack!

Tomato & mozzarella salad. I got some yummy mozzarella for pizza and really want to make this with the leftovers, but my tomatoes aren't ripening anymore

My DH makes salsa with tomatoes. I make marinara. We have both in our freezer right now!

You can dice the carrots and put them in tomato sauce also. Try adding bacon to the tomato sauce in place of meat. Its awesome.

I always blanch tomatoes, peel the skins off, chop them up, and freeze them. That way I can make 'fresh' salsa all year!
