What's for Dinner?
Not sure what I want for dinner.....any suggestions? I like quick and easy meals, and I try to eat clean (not a lot of processed or boxed foods).

The bf has been wanting ribs, so I think he's making that for dinner.
Have you heard of eMeals? It's a subscription menu planning site. You can choose your plan (Clean Eating is one option), and it gives you a list of seven recipes for the week, plus a grocery shopping list. It's really helped us with the dreaded "What do you want for dinner?" debate!

I'm leaning towards "cheater" pad Thai - I already have our meals made for the week and I'll be eating while Cheyanne is at driver's ed and she'll literally be eating in the car on her way from there to her school for a college seminar tonight. She wanted me to grab her a portion of the pad thai so I'll probably eat the same before I leave to pick her up.
Here's how I make it: (serves 1) 2 ounces wide rice noodles (cooked and rinsed) Assorted raw vegetables such as: Shredded cabbage, bean sprouts, broccoli, bell peppers, scallions, shredded carrots, pea pods - almost anything you have on hand works) Sauce: 2 tbsp warm water 2 tbsp soy sauce 1 tbsp smooth peanut butter 1 tbsp sweet red chili Asian sauce 1/4 tsp granulated garlic powder 1/4 tsp ground ginger Cook the noodles and rinse. Whisk all the ingredients for the sauce together (I actually like to warm it up in the microwave for a minute). Place your noodles in the bottom of a bowl and then add whatever raw veggies you're using. Pour sauce over top and sprinkle with a few chopped peanuts (optional). ETA: You can warm up the sauce to make it a warmer dish with the noodles fresh from the pot, or it's good cold too Last edited by mariewilcox; 03-09-2016 at 01:01 PM. |

I've got a roast beef ready to go.... it's very rare that we get "red meat" (as the prices are through the roof) so it's going to be a nice treat night. I only cook with "clean" ingredients and that just makes it even better.

The kids have Awana club tonight, so we usually grab Chick-Fil-A with our friends for dinner beforehand. I'm happy to have a break from cooking.

I literally woke up thinking about this!! I am so awful at planning meals. I tried Plan to eat for a while, but didn't use it like I should. I just don't like cooking that much.
Marie, your Pad Thai sounds yummy! I'll have to try it. I think we'll have spaghetti & meatballs tonight. I make a big pot of spaghetti sauce and freeze it in meal size portions. |

Good ideas, ladies! I have never made pad thai but this really sounds appealing. I will make it this wkend and if hubs wants, he can have a steak while I have this. He's weird about anything with peanut butter in it but for me....it's a done deal. I'll eat anything with PB in it.
I'll check out eMeals. Never heard of that before. One thing I try to do is stick some recipes in a binder that stores beside my microwave in the kitchen. I flip through that for meal/ snack ideas. But I haven't put anything new in for awhile and I'm getting bored. I like to swap out the recipes every couple of months. Jill - that's funny about the ribs/pork chops. I do that too if I don't label a package, I think I'm grabbing one thing but it turns out to be something entirely different LOL. It can really mess up my plans! Jenn - I only buy roast if its on sale. Actually, I try to buy as much as I can on sale these days b/c food prices have skyrocketed here. I just about had a heart attack when I saw $10 for a small head of cauliflower last month. Then the hamburger prices almost doubled this month.

I'm making homemade sweet 'n' sour chicken for dinner. We don't do a lot of boxed or processed, either, because of my DH's gluten intolerance.

I have chicken in the crock pot for burritos. Season the chicken, shred it and serve with your favorite tortillas, or go all fancy and make a burrito bowl. I love how you can mix whatever you like into those - beans, cheese, veggies, salsa, etc.

All these sound delish! My son has a baseball game at 5:15, so I'm sure we'll be grabbing something to eat on the way home after his game. I did try a new recipe (for us) last night though and it was really good. It was Cilantro Lime Chicken and it was so good!

Kendall....printed out your recipe....yum! Can't wait to give it a try. We have pork chops a lot (one of the cheaper meats that is often on sale at our local meat store).
LeeAndra....i've never made homemade sweet and sour before. Can you share your recipe? That would be awesome! So many good ideas here, ladies!

It's actually Elisabeth Hasselbeck's GF recipe but it's still not store-bought sauce.
Mix the following in a small bowl: 1/4 c. chicken broth (or water), 3 Tbsp. soy sauce, 2 Tbsp. ketchup, 1 Tbsp. brown sugar, 1 Tbsp. cornstarch, & 1 Tbsp. rice or white vinegar. Set aside. Saute some chicken in oil in a medium-large saucepan until chicken is almost cooked through. While chicken is sauteing, dice 1/2 to 1 whole onion, slice up 2-3 bell peppers (of any variety), & dice a handful of carrots. Remove chicken from oil and throw veggies in + 2 cloves of minced garlic. Saute until soft. Dice chicken & throw back in pan. Add in sauce and cook over low to medium heat until sauce thickens. Add in 1 can of pineapple chunks or tidbits, mostly drained, and mix well. Cook until sauce is desired thickness. Serve hot over cooked rice. Full disclosure: I don't usually make it with the peppers or the carrots because it makes my littles less likely to eat it so you can make it without if you don't have those on hand. |

Tonight I'm making beef chili con carne in the crockpot. It's my first time making this and I'm not really sure if I'll like it or not. This dish is not popular here but I've tried it a few times in restaurants and I decided to give it a go. I followed this recipe but because I don't like shredded meat, I just cut it into pieces.

Since I have been so severely sick with an awful stomach bug that lead to me having to go in for IV fluids, I am not sure what we are having for dinner.
I have had plain white rice cooked in chicken broth until I am sick of rice for now. Since I'm still a little puny and catching up on my dehydration with fluids, we may just do semi fast-food dinner tonight.

Why not making a chicken meal soup form the chicken broth just put in pieces of chicken and lot of veggie's and if you want a bit of pasta ! It is so easy and don't cost any time
