these were one of the favourites in the cookie basket i made last year
http://www.twopeasandtheirpod.com/ch...runch-cookies/ the peppermint crunch jr mints were difficult to find-- and can be replaced. tbh, plain old choco chips work fine too. I made them several different ways & the jr mints weren't necessary with all the candy cane I used. I found big fat candy canes at the dollar store and smashed those up instead of little ones too.

I make these all the time. They're super easy, no bake, and relatively healthy for a cookie. You can leave out the flax if you don't have it on hand, but it's a nice omega 3 boost. I put them in the fridge for about an hour, but you can keep them at room temp. I also prefer to use the mini choco chips and use all natural PB. http://sharefoodpics.com/?p=2159 They're a perfect fit in those little mini cupcake wrappers.
