Default I need 2 yummy recipes...

So, last minute preparations for my Easter dinner! I picked up some spinach and strawberries... I'd love to make a strawberry spinach vinaigrette salad! Yummmm! Just wondering if anyone has a really good recipe for dressing for that salad?

Also, I bought some red potatoes. What's your fave way to prepare them? I'd love new ideas! Thanks!

I have no clue on the dressing! Sorry!
But, I make these potatoes all the time & they are TO DIE FOR!!!!!!!

I'm making this tonight to go with our BLT sandwiches, I always use the small red potatoes when I make it & it is so good! My dad always requests I make it for BBQ's and family dinners and I never have leftovers!

Mmmm... those potatoes look good! I'm thinking I want to do them chopped in big chunks and throw them in the oven... so I might just chop 'em, toss them in olive oil, then season them and pop them in the oven.

I found this recipe on Rachael Ray for the dressing... sounds really yummy!

Strawberry Balsamic Vinaigrette

-4 large, ripe strawberries, finely chopped
-3 tablespoons balsamic vinegar, (eyeball it)
-1/3 cup extra-virgin olive oil (EVOO), (eyeball it)
-Salt and pepper

Place strawberries in a shallow bowl with vinegar and let stand 10 minutes. Whisk in EVOO and season the dressing with salt and pepper.

I'm going to toss the spinach in that along with some toasted, sliced almonds, some crumbled feta cheese, and sliced strawberries!! mmmmmm!
