Exclamation Potluck Mayhem

I am a little OCD when it comes to potluck dinners. I am a firm believer that if it is a small potluck (under 10 families) it works better if there is a theme, some sort of direction... i.e. Mexican, Italian, BBQ, Picnic, Salads/Sandwiches, Thanksgiving, etc.

Well, our little small group Bible study has a 'Thanksgiving' potluck this Sunday. We all decided to text each other to say what we're bringing. My text messages came in like this... in order:

Quinoa Salad & pizza for the kids
Corn Casserole
Chocolate Cake
Lasagna & Garlic Bread
Caprese Salad (fresh mozzarella/ tomatoes/ basil)

I felt a little nauseated thinking of eating all of that on one plate. I also felt a lot of PRESSURE to add something to bring it all together...

Help me out here!

I am the last to reply. I'm thinking we need another main dish? But I'm also thinking of just heading straight for another dessert since dinner already seems like a cluster-cuss. What do you suggest I bring?

Brook., I'm pretty sure no one in your Bible study knows what Thanksgiving is!

I think I would bring a veggie dish. Most people like lasagna (and it's filling), but corn and tomatoes are not really veggies. I would do something with green beans or broccoli. You could go mega traditional (and the only person bringing an actual Thanksgiving dish!!) with green bean casserole or broccoli-cheeseice casserole.

I agree that another main dish might be good, preferably something light and non-starch. Maybe a chicken dish? (Or turkey, given the "theme" of the potluck, LOL.)

Well, I am personally thankful for lasagna, but I am not sure if that was the point...

Good luck!

I don't think it's any weirder of a combination than quinoa salad & lasagna.

Just focus on being thankful for the people and don't think about the food, lol.

I think these three work together. The quinoa salad and the corn casserole, not so much. How about broccoli? Some sort of green vegetable, I think.

Maybe everyone knows that there will be an abundance of turkey during Thanksgiving and Christmas?

Yes. This.

And I'm guessing they took "Thanksgiving potluck" to mean the time of year not a traditional Thanksgiving meal (obviously).

I would do a veggie tray or cut-up fruit (which I often buy pre-cut from our local Publix, because it is always always always good).

I couldn't find much in the way of what I consider to be "Thanksgiving" themed in those choices. To each their own, though! I'm going out on a limb this year for our family's T-day meal, by going off our typical menu and making roasted mushrooms (might be as bad as the year I served green peas, but they sound yummy!)

I'd go with a fruit tray or fruit & veggie. Though I look at that list & my mind says "Bring meat!!!" but I don't know what to suggest. Meatloaf is a good potluck dish but I don't think it goes with the rest of it. Maybe a turkey breast? I know I can get them pre-cooked, just heat & go from one of the grocery stores around here. You could put it in a crock pot with a cider based, not creamy gravy.

I'd bring homemade meatballs in tomato sauce since it goes with the lasagna and adds more protein. If not meat, definitely a veggie dish like green beans (not casseroled) or a veggie tray (since it's super easy).

I think you're low on protein. Only the lasagna has meat. So how about some chicken to go with that quinoa sallad.

Or veggies that are kid friendly. I know my son won't eat anything leafy so if there is basil on the tomatoes he won't eat them.

I know you all are just dying to know what I chose to bring... LOL!

I figured one chocolate cake was not enough for all 12 of us adults (plus all of our kids... Which I think will be around 16 kids), so I'm bringing my big yummy pumpkin pie cake. Since we didn't have any appetizers, I'm also bringing spinach dip (best spinach dip ever) with torn up pumpernickel bread, chips, and a veggie tray to dip in it.

The totally awesome thing is that Corn Casserole decided to make a Pot Roast instead, so we will have meat!!!! Now I think it's semi-not-bad anymore.

Oh good. It sounds like it is all working out.

I would definitely be interested in your best spinach dip ever recipe too (and the pumpkin pie cake).

Sure thing!

This is the Best Spinach Dip Ever recipe. I get compliments on it every time I make it. It may sound strange, but even if you don't like water chestnuts don't omit them. I hate water chestnuts, but they are really good in this dip! Just make sure to chop them up really well.

This recipe is similar to my Pumpkin Pie Cake recipe. The only thing I do differently is:
- I use 1 stick + 2 TB butter instead of 2 whole sticks.
- I add these spices to the pumpkin/egg mixture:
1 tsp. nutmeg
1/2 tsp ginger
1/2 tsp cloves
2 tsp cinnamon
1/4 tsp salt

I Pinned that dip recipe. No water chestnuts for me, though - they gross me out.
Thanks!

You know what's funny? I started planning a Thanksgiving Day potluck for work yesterday. We decided on a soup and sandwich theme. I texted the two guys who were off and told them about it and said so far we had 2 soups and sandwiches covered. The one guy said he would bring stuffing. Oh, I giggled! Soup, sandwiches and stuffing.

LOL!!!

We met tonight and it was great!! Not only did we have the dishes I mentioned, but we also had a big punch bowl of sangria, beer, and espresso. I took a scoop of everything and it all went down fine without plate dividers. The only thing I skipped was the garlic bread and chocolate cake.
