Default NSBR: Freezing Vegetables

I was wondering if anyone knows of a good way to freeze vegetables - in particular, asparagus. One of our local stores is selling it for $0.98/lb. this weekend and we love asparagus but won't buy it when it's $3.99/lb. in the off-season. Any tips would be appreciated!

For asparagus (and green beans), the way I do it is, wash it and dry it really well, then lay it out on cookie sheets. Stick it in the freezer for a couple of hours, and then wrap up in paper towels and put in freezer bags in whatever size portions I want.

I don't really like the texture of frozen asparagus...so I would actually be tempted to make up a bunch of asparagus soup (the pureed kind). The soup would freeze really well (without added milk/dairy--add that when you reheat it). I love soup for lunch and have started freezing some of my favorites just for me!

Most veggies need to be blanched before they are frozen. If not they still "age" (contiune ripening and rot). Blanching destroys the enyme that cause that!! Just drop the veggie in boiling water for a mintue or two, let cool, bag it up (squeeze all the air out) and it's good in a deep freezer for a year!!!

Does anyone have suggestions on how to freeze chopped onions without them stinking up the freezer? We got free onions from our church garden, and my dh (bless him) chopped them all up for me. I have wrapped them in tin foil and then put them in freezer ziplocs and the smell is still so strong that the garage (where the freezer sits) smells of onions. I'm afraid the smell will permeate the food in the freezer if I leave them in there. Anyone?

I think the only way to keep that from happening with onions is to vacuum pack them. It might help a little to throw a fridge box of baking soda into your freezer.

I've never had this happen with asparagus or green beans, But with corn and sugar snap peas I have.
