Default soft(ish) gingerbread men cookie recipes?

so ce wants to make gingerbread men.. but......... I hate hard cookies.. lol.. is there a cookie recipe that tastes like gingerbread but isn't all.... disgustingly hard like gingerbread men?

The recipe that is in my gingerbread cookie-in-a-jar project in the store is really chewy and soft, but stays together really well. I was surprised at how nice they stayed for over a week sealed in a rubbermaid container.

i despise hard cookies too. if i have milk to dip them in its better, but chewy is the best! i'll have to check out that recipe too.

I picked up the Betty Crocker ones in the bag that you just add eggs, water, oil to... they are amazing! So soft!

If you don't mind can you tell me if there are milk products in the ingredients? I would love to make these but we have dairy allergies in the family. Thanks for looking

i just don't get hard cookies. could a hard cookie lover please explain why you would prefer hard to soft? chewy = delicious in my book.

I found this recipe two years ago and it's wonderful. I never liked gingerbread cookies before I made these. These have the most wonderful soft texture...the texture alone has me eating and eating these fabulous cookies. I know it says trees, but I figure we're all creative enough here to figure out how to make gingerbread men.

The secret to having soft gingerbread is all in how thick you roll it. Roll it out between 3/8 in. and 1/2 in. and it'll be soft
