Meatloaf recipes?
I have never made meatloaf. Like never ever. LOL so I'm looking for some good meatloaf recipes And preferrably I'd like to make it with ground turkey. TIA!!

We use this recipe from Kraft Recipes and it's a hit with all three of my kids (and the big kid too lol). I use 2lbs of lean ground beef rather than just 1lb and brush the tops with a little Sweet Baby Ray's BBQ sauce and then I add a little shredded cheese to the top of mine but everyone else likes theirs plain on top. I grew up absolutely hating meatloaf, like to the point where I would sit at the dinner table for hours after dinner cause I didn't want to eat it the way my Mom made it (with onions ewww) but I think this way is pretty good!

I have a 'recipe.'
1 lb. ground beef (I assume it would be fine with ground turkey) diced onion (to taste) salt & pepper 1 egg crushed crackers, bread crumbs, etc. (any kind of binder) soy sauce Worcestershire yellow mustard ketchup Italian seasoning garlic powder cumin chili powder There are no measurements because it really is all to your preference or taste. I use roughly the same amount of all the seasonings (a hearty sprinkling), a few squirts each of soy and Worcestershire, twice as much ketchup as mustard (the more ketchup, the sweeter it will taste, so don't start out with too much), and then mush it all together with my hands. Since we are GF and I haven't found any good-tasting and good consistency GF bread/crumbs, we leave out the binder, and it's just a little less meatloaf-y (and more burger-y) than it should be. Bake at 375 degrees for 45ish minutes. |

I use the one from my Better Crocker cook book and while it calls for gr beef I have use gr turkey and gr. chicken and we all much prefer gr. chicken. Gr turkey is really to "moist" (SLIMY) for me!!
1.5lbs ground meat 1 cup of milk 1 TBSP of Worcestershire sauce (I always put more but we like W sauce!!) 1/2 tsp salt 1/2 tsp pepper 1 large egg 3 sliced torn bread pieces (I use 3/4 cup oatmeal) 1 small chopped onion I will tell you that if you use turkey or chicken you will not need 1 cup of milk....I would start with 1/4 cup and mix it up and then go from there! I just used this recipe for meatballs tonight with ground chicken and I didn't use any milk at all and my balls stayed together nicely!!!

I use the lipton onion soup mix recipe and instead of using ketchup, I use Heinz 57.
I also put some Heinz 57 on the bottom of my loaf pan and top it with brown sugar, then make the meatloaf according to the Lipton onion soup mix recipe. It's yummo! |

I use this one, and it is the ONLY meatloaf recipe that I really LOVE. We had it just last week, in fact. It takes a little more time than your average meatloaf, but I think it's worth it. I've never used it with turkey, but the recipe calls for either.
Famous Dave's Old Fashioned Meatloaf 2 lbs. ground beef or ground turkey 1 cup crumbled up biscuits (I make biscuits to serve with the meal and then crumble up enough to make 1 cup) 1/2 cup Ritz cracker crumbs 1/2 cup finely chopped onion 1/3 cup finely chopped green pepper 1/4 cup grated carrot 1/4 cup heavy whipping cream (the person who gave me this recipe says that she has also used fat-free half & half or evaporated milk) 2 eggs, beaten 1 Tbsp. BBQ sauce 1/2 Tbsp. steak seasoning 1 tsp. mustard Sauce: 1/2 cup catsup 1/8 cup packed brown sugar 1 Tbsp. finely chopped onion 1 Tbsp. finely chopped green pepper For the meatloaf, combine all the ingredients in a bowl and mix well. Shape into a load and place into a greased 5x9 inch loaf pan. Preheat the oven to 350 degrees. Mix sauce in a sauce pan and simmer until the onion is tender, stirring occasionally. Pour sauce over the loaf. Bake for about 1 hour.

Oh and I wanted to add that while searching for my recipe online I found that Betty Crocker actually has a turkey meatloaf recipe that calls for greek yogurt instead of milk and that makes tons of sense since it is way more "juicy" then ground beef and it doesn't really absorb the milk!! Last time I made meatballs with turkey (last week) the pan was covered with a "scum" when I pulled them out of the oven...it was the 1/4c of milk I put in them!!

Pioneer Woman's meatloaf is really good, but it has bacon on top, so kind of fattening and I doubt you would want that with ground turkey.

CAMPBELL'S CLASSIC FAMILY MEATLOAF
1 can Campbell's tomato soup (I use Heinz) 1 lb. ground beef 1 box of Stove Top Stuffing (straight from package) 1/4 c. minced onion 1 egg, beaten 1/8 tsp. pepper In bowl, mix all ingredients thoroughly. In 12 x 8 inch microwave safe dish, FIRMLY shape into 8 x 4 inch loaf. Bake at 350 degrees for 1 1/4 hours or until done.

I use the recipe from the Betty Crocker cookbook too, but I use about a pound of ground beef and about 1/2 pound of sausage. Learned that from my dad and he makes the best meatloaf ever!

I do not have a recipe exactly. I just mix 1 pound ground beef, 1/2 a pound sausage (like jimmy dean pork sausage), crackers (I like ritz because it has a richer taste then saltine), tomato sauce, an egg, salt, pepper, a little bit of whatever seasonings I have on hand and mix it up until it is all bleneded together. Make loaves and bake at like 325-350 for an hour or so. Sometimes I will put some mashed potatoes and cheese in between layers of meat as well.
I used to argue with my husband that it was not weird to put sausage in it that if you just used ground beef it was technically not really meatloaf but more like a giant hamburger LOL. I like my recipe though. |

I totally use the Betty Crocker cookbook recipe LOL! Probably the only recipe in the whole book I actually use LOL!

meatloaf is a HUGE fave of everyone around here.
here's my recipe...straight from my mama's kitchen 1-2 lbs ground beef chopped up onion chopped up green pepper 1 egg bread crumbs (i apologize for no measurement on this one, but we never measure stuff, just eyeball it) salt pepper a cup of sugar a tbsp or worchestire bake in oven at 375 until not pink in the middle. (i like to make mini loaves because it doesn't take NEAR as long ) sauce for on top ketchup mustard worchestire and brown sugar

"Dry" meatloaf is new to me. We actually cook it in tomato or marinara sauce in a dutch oven around here. You can also add some puffed rice cereal (unsweetened, of course) in it to make it less dense.

I do my meatloaf in the crock pot! It really keeps it moist and flavor full.
1 1/4 pound ground turkey breast 1/3 cup dried plain bread crumbs 1/4 med onion 6 Cloves fresh garlic (we love garlic) 1egg Splash of Worcestershire Salt/Pepper Seasoning to Taste Crock pot- 6-8 hrs on low. (you can line your crockpot with foil for easier clean up. I use a rack and all the fat drips down below which makes it even leaner). When the inside temp is 165 you are good Lots of good recipes here- I am going to have to check them out! Meat loaf is a family fave around here I put the onion and garlic in the food processor and just basically make a paste of it. I add it to the meatloaf and it keeps it moist and juicy and very flavorful. When its done a put our fave BBQ sauce on top. Last edited by dmogs; 01-14-2012 at 06:49 PM. |
