lunches? What do you make??
I am a habitual meal planner and I always struggle with lunches. It is mostly me a my dd (5) during the day so I get in a rut. Any ideas (quick and easy-maybe fun )

I usually make my daughter a deli meat sandwich, a juice pack, yogurt tube or apple sauce & a treat (Bear Paw, Rice Krispie Square, etc.). Nothing special but she never complains

I am only home with my son on days off, but he loves when I give him crackers, meat, cheese and some fruit. Nice and balanced, easy and he's happy.

If we're home I try to do something different than the usual that I pack in L.J.'s lunch. We've tried and are going to try some of the more fun ones off this site...

Have you tried any of the muffin tin meal ideas?? I think they are soooooo fun and my kids (6 & 5) looooove them! Plus, they make me feel waaaaay less guilty about adding in a little helping of chocolate chips or just random "fun stuff" to our meal plan!!! LOL!

Oooo love that Muffin Tin site, Leigh! ...though my son would kill me for putting yucky veg in his lunch (I have to 'hide' all things veggi).
I also have a set pattern to my lunches for Alex: a bready/ pasta thing, fruit, yogurt, water, treat. Sometimes I deliberately make the bready part quite small so I can add a homemade muffin, or slice of fruit cake, as they can be quite large. Other non-sandwich, prepare-the-night-before-if-i'm-organised things I sometimes make are: Alex particularly loves pasta with green pesto and then pretty much whatever I choose to add to it - its good hot or as cold leftovers even. He'll also eats fritatta (no idea how to spell it!) - which is basically a potato omlette, with a little ham, onion etc thrown in. Sometimes I do tortillas with cheese, ham, onion, +/- sundried tomato, folded in half and then grilled until melted together and toasted on the outside, then left to cool and sliced into triangles. After that I totally run out of ideas! I'm definitely watching this thread |
