I am so stinkin' hungry!!! I just ate half a box of Goldfish crackers. I need ideas ladies. It's just me and the kiddos and I don't feel like going anywhere in this crappy rain.

dinner? we had a late lunch of Stouffers Ravioli, lol. Lately, i have been dreading cooking for some reason. so its been easy stuff, like corn dogs, fish sticks, grilled cheese, spaghetti, frozen lasagna's, etc.

i just don't wanna do it!! lol

DH put a roast in the oven a couple of hours ago and it smells soooo good. Now he's peeling potatoes to cook and mash. I can't wait!

Zuppa Toscana for us. Here is my version of the Olive Garden Soup.

SOOOO EASY!

ZUPPA TOSCANA
A very yummy hearty soup that tastes like the real thing from The Olive Garden, only better! ENJOY!
From: The Kitchen of Liz Reiber

Prep Time: 10 mins
Cook Time: 35-40 mins
Difficulty: Easy


INGREDIENTS

4 Links Turkey Sausage, spicy or mild- casing removed

1 Medium Onion, finely diced

1 (6oz.) bag of Real Bacon Bits

1 Tablespoon of Minced Garlic

6- Medium Russet Potatoes, washed and NOT peeled and cut into medium thickness slices

4 Cups coarsely cut Kale (into small sized ribbons)

Salt & Pepper To Taste

½ Cup Water

½ Cup Heavy Whipping Cream

6-8 Cups Chicken Broth

Red Peppers Flakes if you like more spice (optional)

Fresh Grated Parmesan Cheese to Serve (optional)

DIRECTIONS

Put the ground turkey sausage in a heavy pan, and cook over medium heat until halfway cooked. Add ½ cup of water, the real bacon bits, the onion and the garlic. Cover and cook another 10 minutes over medium low heat or until completely cooked.

In a large stockpot, add the chicken broth and potatoes. Bring to a boil, then reduce the heat to medium low. Then, add your ingredients from the pan (turkey, onions, etc) to the stockpot. Cook for 10 minutes on medium and then add the kale. Season with salt and pepper, and simmer another 10 minutes.

Finally, remove a little of the potato from the pot, and place it in a bowl. Mash the potato together with the cream, and then add this mixture to the pot, mixing well.

Serve hot, offering a sprinkle of grated fresh parmesan cheese, if desired.

Dh is cooking. He's gone all gourmet tonight. We're having crepes stuffed with broiled chicken, mushrooms & aspargus topped with hollendaise sauce. With crepes stuffed with chocolate mouse for dessert.

And all from scratch.

Not sure what has gotten into him but I am looking forward to it.

I was at a birthday party with DS until a few minutes ago, so we're doing easy tonight. (Okay, we do quick and easy most nights, but at least I have a good excuse tonight!) The boys are eating rotisserie chicken, brown rice, Clementines, and mixed vegetables. I think the grownups are going to order in later.

Well, I'm having shredded beef tacos soon and we're going to Sean's Christmas party at home depot with all the holiday fixins later. So, I guess I'm getting two dinners tonight.

um, dinner will be whatever speaks to me on the menu at the restaurant. lmao Tonight my boss, his wife, his nephew (who is the warehouse guy at work), Des and I are going out for dinner, our own little "staff" Christmas party (not so fancy when there are just three of us at work. lol).

We ended up at McD's - BLECH. (Sorry Bree...) I ate half of my McChicken sandwich and threw the rest away. I hate McDonalds....

I had sweet potato fries with ranch dressing and I'm going to get a pear and apple right now to eat. I had no motivation to cook today. I cooked yesterday.

We had curried cauliflower soup and homemade honey walnut bread...yummy! Both recipes are out of this month's Vegetarian Times magazine.

We have been eating thawing stuff for the last 2 days and probably will have to again tonight. We threw away soooo much food that I have to salvage what I can.

Last night it was
Chicken Breasts on the grill with bbq sauce
Teriaki turkey tips
Steak tips
Garlic & Herb chicken sausage

Oh and there were 14 of us because I had all neighbors over for candlelight dinner!

Logan's Steakhouse. They have $2.99 kid meals on Mon & Tues and then they have 2 entrees for $12. I don't feel like cooking and we are headed to the mall to see Santa tonight so might as well eat out too!
