What you do is create a separate library for him. When you click on the iTunes icon, hold down the shift key and choose Create New Library. Then make his own. Just remember when you go to sync your iPod to hold the shift key down when you start up iTunes if his was the last used because whatever was last used is what opens if you just click the icon.
I do this for my youngest daughter because I have her stuff on my laptop and didn't want her stuff and my stuff blending all the time.

I've never created a separate library, but dh and I both sync ours to the same. We both use my pc, and if he doesn't want some of my music or apps on his, he just deletes it when he's done. I believe(if I'm remembering correctly) when we first put all our music into itunes to put on our ipods, it said we could have up to 5 ipods synced to it.

I found it annoying to delete the music and apps every time though, so having separate libraries works for us.

I have both my iPhone and iPad that I sync on my PC and I believe it says you can sync up to 5 devices per account. I don't automatically sync everything to my iPhone/iPad though, I have it set to where I manually add the songs/movies/videos/books etc. that I want on each device and then I only put what I want on them. Plus my iTunes library is WAY too ginormous to fit all on one device anyway since we have like every single CD we own loaded in iTunes plus everything we've bought on iTunes & Amazon.
