Default Easter Menus

So my family is coming Sunday night for dinner and I'm at a loss for menu ideas. Usually, I find inspiration quickly, but this time, nothing is sounding good.

What are you having? So far, I'm sure we'll have a chocolate fondue with fresh fruit for dessert, but I'm looking for main course and appetizer ideas.

Our easter tradition is to have a sprial sliced ham with the classic mashed potatoes, green beans, rolls, and some kind of salad. This year we are going to my in-laws lake house so it's a little more casual. We're having smoked turkey breast servd with cheesy potatoes, jalapeno cornbread; Caprese salad (tomotoes, fresh mozarella, basil with balsalmic vinegrette over; steamed veggies with parmesan cheese over top, and fruit salad. Kind of a upscale picnic since the lake house is very casual.

I always like looking at Rachel Ray's menu plans and Better Homes and Gardens online. Good luck! The fondue sounds delish.

We're doing ham, deviled eggs, a pasta side rolls, salad, and, later in the evening, resurrection rolls. It will be just us, so we're not going all out with the potatoes and desserts and everything... just keeping it semi-simple this year.

Hmm... mom is making Easter Dinner... I think she said we are having Tenderloin Beef tips and mashed potatoes... yum! That is my favorite meal.... Not sure what else... probably spring salad (a lime jello, cream cheese, and marshmallow salad that is oh so yummy)... and for desert she wants to make a sponge cake...

We are traditionalists so we usually have the same menu. Easter is traditionally at my house since I have the best yard for the Easter egg hunt. We have a honey baked ham, cornbread casserole, green bean casserole, deviled eggs and asparagus. My sister is bringing mashed potatoes, and mac and cheese. My mom is bringing strawberry pie. We will probably end up with a broccoli, rice casserole and another dessert as well. My favorite appetizer is fresh jalapenos stuffed with sausage, and cream cheese but we will probably skip those. I also like a good spinach, artichoke dip.

We're doing a leg of lamb, new potatoes in a dill sauce, and salad. We're keeping it fairly low key since I'm doing my first big lamb (and yes, it does seem ironic to be having 'lamb' for Easter considering). We'll have had chocolate pie earlier in the afternoon for my grandmother's birthday.

But with my Lenten sacrifice of staying off the sugary stuff over...I don't really want that pie!!!!

Funny thing is I have a ham in the fridge, but I'm not feeling it. After much deliberations, I think we are going to grill. Marinated pork loin, grilled veggies (mushrooms, peppers, onions, zucchini) and PW potato cubes in aluminium foil with cream and butter.

First course is going to be liver pâtés and cheese with multigrain grilled flatbread and probably a green salad.

Now I have to go to the grocery store... yuck.

It's just us this year so we are doing pretty low-key. Parmesan Crusted Tilapia, Steamed Broccli, au gratin potatoes (maybe...) and rolls. Dessert will be our traditional Easter Bunny Cake. And of course jelly beans and different chocolates

It's just us, and apparently, DH's family may be joining, I just got the memo on that...

I am making a ham, potato salad, rolls, devlied eggs, a green veggie, and who knows what for dessert.

tonight we're having Tri-tip, with probably a million sides, at my sisters MILs, and I'm taking a White Chocolate Cherry Cheesecake with Pecan shortbread crust

Can I come to dinner at any one of your houses? We did a brunch today, ham, asparagus and red peppers, sweet potatoes and a big old salad. Tomorrow it will be leftovers I think.
