Default Easter breakfast?

Do you do anything special for breakfast on easter? We usually don't but I want to do something different this year and would love ideas, and recipes if you have those. Thanks!

mom used to do eggs and bacon and toast. but now that we're older, and there's like, 5000 pounds of food for lunch and dinner, she doesn't do breakfast anymore.

have you ever made french toast casserole? it gets made the night before, aside from cooking. and then in the morning, you just put it in the oven to cook. that way, you can cook it while the kids are still sleeping maybe?

I usually make a breakfast casserole. Super yummy and easy. It's also one you make the night before.

Ingredients:

9 eggs
1 1/2 cups milk
1-2 lb. bacon or sausage
Salt & Pepper to taste
8-10 oz shredded Cheddar Cheese
10-12 Hashbrown Patties
9x13 Baking Pan

Spray pan with cooking spray. Cook bacon or sausage, drain and crumble. Line baking pan with hashbrown patties. Spread sausage or bacon over hashbrowns. Mix together eggs and milk in a separate bowl. Add salt and pepper to egg mixture. Pour in egg mixture. Sprinkle on cheese. Refrigerate overnight. Bake at 350 degrees for about an hour.

I'm not a big fan of the french toast casserole. I prefer regular french toast. It's my favorite breakfast. But, it is easy to do and people usually love it.

We will have an Easter breakfast with freshly squeezed orange juice, boiled eggs (fresh from our chickens!), Easter bread with chocolate, strawberries, yoghurt and probably chocolate eggs from the Easter Bunny Already looking forward to it!

I do a veggie frittata that I cook in muffin tins that my family loves for breakfast and dinner.

Also loving the banana nut pancakes right now, so I can see those for breakfast tomorrow.

I'm not sure yet, but I think we'll have pancakes and eggs, bacon and toast! Then we'll go Egg Hunting with the girls!
