Chili Recipe
I'm in desperate need of a super awesome, yet simple, chili recipe. In all my years of cooking, I've just never found one that I really love. My kids are requesting chili for dinner this week, so I need help!

I don't have a recipe with measurements really but here is what I do:
I cook chopped onions and peppers (how much and colors are your choice) in a little olive oil. Then chop up some garlic cloves (2 or 3 - we like a lot). After about 5 minutes add about a tablespoon of chili powder, about 1 teaspoon of paprika, 1 teaspoon of cumin, and 1 tablespoon of cocao powder. Stir for a minute and then dump in a 28-ounce can of crushed tomatoes or tomato puree. This is my base - from here you can add meat if you want or add beans of your choice (black or kidney are our faves). If you like more vegetables add different colored peppers, chopped tomatoes, etc. |

Oh my gosh - I LOVE chili... this is the only dish I make almost weekly during the winter....
I don't have an exact recipe, either... its more of what is in the pantry and dump in recipe... brown 1lb hamburger add chopped onions and celery, cook until soften Season with chili powder, cumin, garlic, onion (I also used this seasoning - but I doubt you have it near you http://www.bowlofredchili.com/... when I'm out, I double these other seasonings - like a palm of each) continue to brown ("opening" up the dried spices) dump in cans of beans (I like a lot of beans so I used lite and dark kidney beans, black beans and sometimes chili beans) dump in cans tomatoes (usually diced or crushed) If need more "soupy"... add a can of tomato juice sometimes I add a can of sweet corn. For the Wisconsin version - you can cook up elbow macaroni and add it IN the chili... but we are gluten free, so we now don't add noodles. ETA - this is "award" winning... Haha... it came in first the first year I entered... and then second, the next year Dave's work chili cook off... I only lost because the guy who beat me, competes in chili cooks offs outside or work. :/

Super easy and the kids will eat it.
1 lb Ground beef cooked and drained McCormick Chili Seasoning Pk (Mild) 2 cans Kidney Beans 2 cans petite diced tomatoes 1 can Tomato Soup Dump everything in the pot after you've cooked and drained the ground beef, bring to a boil, then simmer about 20 minutes. I add other beans sometimes, like a can of pinto or black beans. I don't drain any of the cans. Mine it more soupy than thick like a lot of chili is. |

I don't usually use a recipe when I make chili soup, but it's different here in Indiana than anywhere else I have found..lol!

I'm going to hope to not steer this thread off course but do some people make chili WITHOUT beans? I never make chili because I can't stand the texture of beans but I think I'd love it without..

We have an amazing chili recipe with a story attached (DH got it from a homeless guy he let stay with him back when he was single and in college). Everyone we've given it to LOVES it and raves that he should enter a chili contest. But... it is far from simple and is loaded with bell peppers so the kids probably won't like it.
When I was a kid my mom made simple chili with McCormick's chili seasoning packet. It was almost exactly like THIS RECIPE except with dark red kidney beans (they were the only beans us kids would eat). |

LOL Kristin - I have a couple friends who make theirs without beans; - they just add in more peppers, some corn, or more meat.

You can buy canned chili without bean, for like hotdogs and such. I'm sure lots of people do it without. We love beans here.

Kristin, traditional Texas chili doesn't have beans or tomatoes, and that's the only way we cook it. I can't stand the taste & texture of them, and I can't stand the smell hubby makes after eating them.

Steak and Sheak is super yummy Lyd! They have awesome milkshakes and a happy hour where you can get them half price. I always get a chicken melt cause I'm not huge on burgers and it's good. The frisco sauce on the melts is super yummy! They are really well known for their chili. You can buy it in cans and stuff around here
