Default It's a have cereal for dinner kind of night...

Work was purely dismal. I have no energy to play the what's for dinner game. What did you all have for dinner? I will need to cook tomorrow night, please give me some ideas.

We just had fast food tonight.

Tomorrow night is Family Dinner/my BIL's birthday party. We are having what we call Christmas Rice (deconstructed stuffed peppers). I don't have an online recipe for it.

Earlier this week, my boyfriend made us eggplant parmesan (with his family's secret meatball recipe -- so good!), and I made myself Everything Bacon Tomato Grilled Cheese from Half Baked Harvest.

Not very exciting. It was just me and Sarah as hubby is out of town. We had pork chops & apple sauce, rice, and veggies. Quick and easy.

We had "FEND FOR YO'SELF" night- first day of school, first day of school softball, then club softball practice for the girl, first day of flag football practice for the boy= No one home at the same time! Our Wednesday evenings are crazy for the next few months. But Tomorrow- I'm doing Chicken Parmesan! MMMM

We are trying to teach our 13 year old more about cooking and planning, etc so each Wednesday starting today she is responsible for picking, prepping and preparing supper that night.

She cheated and took a lasagna I made out of the freezer, and made garlic buns and salad to go with it. Next week she's making sloppy joes lol

Hubby and I went out to dinner at a steakhouse we love. Kids had church so we use those nights as date night while they are at youth group. We always share a steak, cheese fries and salads...it is my one "cheat" meal each week. Lately on Tuesday or Thursday we eat chickfila...it used to be every Thursday but now that my son is working there we sometimes change it up to when he is working so we see him and eat with him before he starts his shift.

Last night we had roast, potatoes and peas. It's one of the kid's favorite meals and something she asks for every year for her birthday.

The other night, we had breakfast for dinner - pancakes. So I understand your "cereal for dinner" all too well!!

Hubs has been gone steady for work trips and we haven't seen him more than a handful of hours all month SO last night when he was home for dinner we grilled steak, and had mashed potatoes and broccoli. (Kids love "instant-pot" broccoli but not prepped any other way!) Kinda a celebratory dinner but if I'd known he'd be around I'd have made a cheesecake or his favorite peanut butter torte too. We did get Dairy Queen though! He's gone again this morning for another week away so we'll probably have a lot of pizzas, cereals and breakfast foods b/c that's what the girls and I like! I know, we're terrible! Lol...

Last night was Black Bean & Chicken wraps. Quick and easy because I had to work that afternoon and had to run into the grocery store on the way home.

Today I grocery shop (usually I do this on Tuesdays, but the past two weeks have me off schedule).

Tonight: Honey Butter Pork Tenderloin and veggies, probably herbed noodles.
Friday: Oven BBQ chicken and baked sweet potatoes and veggie (this might get changed though since I won't be home)
Saturday: leftovers
Sunday: Steak fajitas in the air fryer
Monday: One Skillet Chicken with Green Beans and rice or noodles
Tuesday: Chicken Fried Rice (as it's grocery day this might get bumped down the line )

I have to cook every night something a bit substantial as my hubby works in a bucket truck - those don't go through drive-thru restaurants very well and you never know anymore if the lobby will be open in a restaurant or if one near him will be open. So he has a "dorm room" microwave on his truck that he can plug into his generator and heat meals. I also usually pack him two meals in case he gets "hung out" on a job. Nothing worse than not being able to eat and then when you get home it's too late to eat because you will have terrible reflux.

This post is making me hungry!!!! So many great meals!!! I think tonite since the weather is getting cooler we may have a chicken and broccoli casserole. Best part is that this is my MIL’s recipe and hubby always makes it!

With all this talk of autumn, I'm dying to dig out the crock pot and make the season's first pot of chili, but it's still too hot outside.

Tonight will probably be BBQ Chicken Chopped Salads - romaine, cucumbers, carrots, corn, black beans, roma tomato, topped with panko breaded chicken breast, drizzled with Ranch dressing and BBQ sauce.

We had Papa Murphy's pizza tonight because I was gone all day and was worn out. Last night we had tacos and tomorrow night is potato soup because the weather is cooling down (highs in the 70s vs 90s earlier this week).

One kid is working.
Hubby is working.
One kid made Hot Pockets.
One kid made himself a pizza.
I ate my breakfast egg cups.

These first few weeks of school are rough. I'm exhausted from having my full crew back. Us all getting back into routines and schedules.

I try to plan easy crock pot dinners for crazy days....BBQ chicken, just dump frozen chicken breast and BBQ sauce in and walk away. Shred when cooked, and have hubby grab rolls on way home.
Chicken fiesta... chicken breast, cans of corn, beans, diced tomatoes, taco or fiesta seasoning, shred chicken when done, serve over rice or on taco shells.

When my kids were little, we'd have popcorn and apples for dinner on nights I didn't feel like cooking. Now that the boys are teenagers, that's like an afternoon snack for them.

Last night I cooke Chicken Taco Poblano Rice Bowls from Skinny Taste, and I assume they were good because my boys ate so much there wasn't any left for me!

This week we've had lasagna, chicken with BBQ sauce, and breakfast for dinner (bagels and eggs). I'm a lazy cook--I hate cooking, and the more time and effort I spend on something the less likely everyone is to eat it! They like simple, and that generally works for me.

When we have those nights, it's either- leftovers or cheese quasadilla's or if it's in the budget, we get pizza!

The 2nd Thurs of the month my husband and I volunteer for Forgotten Harvest, and come home exhausted. The girls know that means pizza for dinner!
