Default Recipe needed please!!!!

My mom is throwing a surprise retirement party for my dad on Saturday afternoon and I was told that I have to make potato salad. We are expecting between 35-45 people. It's been YEARS since I have made potato salad. Would anyone care to share their tried and true recipes? Thanks so much!!!!!

Well, I was asked to make it for church a few months ago...I went to Sams club & bought 2 big tubs of it. Everyone loved it & couldn't believe it wasn't homemade!

I don't go by a recipe, but here's what I do. For a smaller crowd, I just get a 5-lb. bag of potatoes (you'd probably need 10 lbs.). Cut them up into bite-size pieces and boil them in salted water. Also boil some eggs in another pot, then chop after finished and cooled. When that's all done, mix all of it together in lots of mayo and add some chopped pickles (or you could even just use relish to save yourself from chopping pickles). I don't add mustard or onions to mine. You just have to go by sight and taste regarding salt and mayo.

I know that's not terribly specific, but this is the way my Mom, MIL, and I all make it and it's YUMMY!!

I have a "recipe" that is super easy! It's a sort of "throw whatever you have together", so I don't have actual amounts, but I can walk you through the steps.

~ Cut up and cook a crap load of potatoes (since you are feeding 35-40 people!!), let cool.
~ Make lots of hard boiled eggs (probably at least a dozen), chop up into chunky pieces.
~ Cube some cheddar cheese (probably a couple cups worth).
~ Chop up some celery, some dill pickles, some radishes, & green onions pretty fine.
~ You can also cube up some ham to toss in, or some crumbled bacon.

For the sauce:
~ Mayonaisse or Miracle whip
~ A little pickle juice to make it runnier (but not too soupy)
~ A few good squirts of mustard to make the color a soft yellow.
~ Some salt & pepper
~ Shake it all up and dump over the salad. Mix it in real good. This salad is supposed to be thick, so some of the potatoes need to break up but not all of them... you want it chunky but sticky.

Seriously. I make this and everyone loves it. It's so easy and just takes a dump of this, a dump of that, some of this, a sprinkle of that!

ETA: This is similar to Kresta's, lol!! Except that I DO add mustard & onions to mine, lol!!

I don't like potato salad, b/c I don't like mustard or onions & most people put them in it. But, this sounds YUMMY!!

Here is how I make mine.
I put potatoes in a large pan. I don't cut them up or peel them before cooking them. Just straight into the pan. I boil them until soft and then peel the skins off and chop them into pieces.
-boil eggs and cut them up
-chop a lot of dill pickles into pieces
-I usually grate onions into it. I would do 1 large onion for the amount you are making.
-I use miracle whip and mustard. Usually until the salad is a darker yellow and of course salt and pepper.
Everyone loves my potato salad. I have to admit it is pretty tasty.

You'll need to double this recipe.

Boil, drain, and cube a bag of potatoes.
While potatoes are boiling, cook and crumble 7-8 strips of bacon.
Dump potatoes in bowl.
Add in equal parts of diced onion and celery (I cheat and use the prepackaged container from the grocery store -- *lol*).
Add salt & pepper to taste. Add in mayo to taste.
Dump in bacon.
Add a little more salt & pepper.
Refrigerate 2-3 hours.

It really is delicious even though there is NO mustard and NO eggs. Really.

in our family we do german potato salad here's our recipe and it serves 4

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

everyone in my family loves it because its sooooo good...and doesnt have a totally potato salad feel but its twice as good just my opinion and such...I think I'll probably make this tomorrow or dinner with some chicken...yuppp

Thanks girls! Deb, I love your Costco idea - unfortunately that is out in this situation. I've got about 12 lbs. of potatoes here already that have to be cooked so guess what I'll be doing tonight? I appreciate all of the different recipes!
