Well, I know I am not the only person looking for new recipes all the time. I am planning my menu and needing new ideas. What are your tried and true favorites? Let's inspire each other to try new yumminess. Are you ready? Set? GOOOOOOOOOOO!!!!!

I love these threads!!

Here is one of my go-to recipes that shows up regularly in our rotation. This is just something I've put together, so I don't have a site to link you to.

We love these though. Jeff says if he went to a restaurant, he'd order these every time.

Black Bean quesadillas with fresh guacamole (Chipotle-style)

black bean quesadillas -

2 cans black beans, drained and rinsed
1/2 yellow onion
mushrooms
red bell pepper
minced garlic
1 cup Monterrey Jack shredded cheese
1/2 cup salsa
8 flour tortillas

-sautee onions, mushrooms, and bell pepper with garlic
- in large bowl, mix beans, cheese, salsa, and sauteed veggies
- spoon mix into tortilla
- fold tortilla in half and place in pre-heated skillet with oil
- fry on each side for 1-2 minutes until browned
- serve with guac and sour cream

chipotle-style guacamole

6 avocados
cilantro (sorry - I don't measure - just a handful)
1/4 cup lime juice
1/2 chopped onion (red or yellow)
jalapeno (I usually use sliced from a jar - like 12-14 pieces chopped up finely)
salt to taste (I usually use somewhere around 1/2 tsp give or take a bit)

I made this last night it is soooooooooo delicious!!!! and there is left overs and so cant wait for lunch time to eat it. Also its a one pot meal

Cowboy spaghetti by Rachel Ray is a go-to for us. So yummy. (I like to make it healthier by using Yves ground round in place of ground beef and use whole wheat noodles.)

Libby, I love your version of black been quesadillas. I follow this one and our family loves it! But, I'll be adding mashrooms, red bell peppers and garlic in ours now!

I do this one alot (sometimes with italian dressing instead of the olive oil and I omit the banana peppers)

Crockpot Chicken (I serve with rice or noodles and peas)
4 chicken breasts
1 block cream cheese
1 packet dry italian dressing
1 can cream of chicken soup
Only takes about 4 hours.

My hubby who doesn't like spaghetti gobbles this up.

Jenn, My pinterest boards have lots of meatless meals and the ones that you can just omit meat and/or replace with refried beans still be good.

Oooh, I love new recipes! Here's one of our favourites. It's super easy to make - even the kids can make it (with some help). This is my son's school homework from last year.



Another similar favourite is one we call Eggy Stuff aka Fritatta/Vegetable Slice, etc, also super easy and both dishes are great for the kids' school lunchboxes the next day.

(I'll have to type this one out as we kind of made it up and I don't have a recipe to link to).

1 zucchini, grated
1 carrot, grated
1 cup grated cheddar cheese
1 cup selfaising flour
5 eggs
1/3 cup olive oil
fresh herbs (as much as you like)
** can also add in corn kernels, chopped mushrooms, diced ham or bacon, celery... anything really

Just mix everything together in one bowl then pour into a greased foil lined baking tray (30cm x 20cm x 2cm deep approx) and bake in a moderate oven for about 30 mins.




We serve them up with garden salads or cooked veggies to make a good meal.

The Pioneer Woman's Chicken Fried Steak is fave, so is Cook's Illustrated Chicken & Dumplings. Zucchini & potato fritattas and homemade mac & cheese are also popular.
