Default How do you eat your veggies?

As I was eating my normal raw veggies, all plain and simple, I was thinking it might be fun to actually do something different with my veggies. How do you like them? Tell me how, please.

we do raw veggies with dip. i know that cancels out the health factor, but we're all pretty active so I figure it's fine, lol! it's the only way to get my kids to eat veggies.

I've been thinking about this. Heard good things, but haven't ever tried it. Does it tastes good plain then?

La, I already eat raw veggies and hummus like it may be the only food around.

I roast veggies a good bit too..broccoli, brussel sprouts, zucchini, and asparagus are my fave to roast

I love grilled asparagus with olive oil and balsamic vinegar too.

I steam broccoli or green beans sometimes too

We make a ton of curries using veggies. We serve them over rice sometimes, but often eat them on their own. We also stir fry veggies and make veggie wraps. We eat raw veg with hummus for snacks.

I make a lot of main-dish veggies. My favorite way to eat them is to saute mushrooms and onions, then add some additional veggies (varies by week-broccoli, cauliflower, green pepper, carrots [partially steamed first or they take forever], eggplant, etc.) and cook them in a purchased simmer sauce like mango curry or tikka masala. I usually add tofu, too, but it's also good without. This week I'm trying a fruity Chinese stir fry sauce.

other than raw, we steam a lot and have them over rice with various types of sauces... but i also love'em roasted [any & all of'em... brussel sprouts & asparagus are my ultra faves] with just a bit of olive oil and some sea salt & pepper.

This one is amazing: http://www.finecooking.com/recipes/s...ble-curry.aspx Sometimes we use regular russet potatoes instead of sweet potatoes depending on our mood. Both are equally as yummy.

Navratan Korma is one of our favs because you can just toss in whatever veggies you have on hand. We leave out the raisins. http://allrecipes.com/recipe/navratan-korma/

We also make a lot of soups using veggies. Recipes should be easy to find using whatever veg you have on hand as the main ingredients.

We roast a lot and grill if possible. All I use is olive oil (spray or drizzle), kosher salt, and any spices that might go with the meal.

This is what got me started on roasting... lol... yes, pioneer woman. Now, when I roast veggies, my kids ask for more helpings of veggies. (the only other time they do that is if it is carrots from a stew).

We roast asparagus and green beans as our favorites, here. I like the Paul Prudhomme Veggie Magic seasoning on them.

Thanks! I need to try roasting instead of steaming when I make vegetables as a side dish.

I haven't made this Saucy Green Beans recipe in a while; it's so good and I need to add it to our menu soon.

I eat veggies so often now that I have joined an organic produce buying club. I actually have been so much more creative about using them because of how many I get each week. In general, I have found my go-to method for most veggies is roasting in the oven at 350 or 400 (tossed in olive or coconut oil and s&p). I also use veggies in soup a lot. My kids eat them the best that way.

What types of veggies do you usually buy? It would be easier to share some ideas if you mentioned a few specific ones.

I roast lots of veggies. I use garlic salt with squash and zucchini. I use either dill or herb de Provence with carrots. Salt and garlic with broccoli and just a little salt and grated Parmesan cheese with cauliflower.

If I'm roasting sweet potatoes, I add just a touch of butter and brown sugar with a pinch of cinnamon and a pinch of sea salt. So good.

I am a vegetarian and actually eat all veggies, but lately I am so boring and just buy broccoli, cauliflower, carrots, tomatoes, cucumbers, green beans, green peppers, onions, lettuce, sugar snap peas and asparagus.

Sabra Roasted Red Pepper is my absolute favorite. My mom made a pumpkin hummus last year that was excellent though.

yes because that's so boring! lol! That sounds well rounded and delish! that's about what we buy too. I buy zucchini though and make zucchini noodles instead of spaghetti

You know what - I don't think I've ever roasted veggies! Well besides potatoes. Huh - I've got a bit to learn!

We eat veggies raw or steamed. Or on the grill.

You guys really have to try roasting veggies. I am not a big veggie fan but roasting them takes a lot of the bitterness out of things like broccoli and asparagus. I'll toss them with olive oil, garlic, parmesan and salt and roast for 20-30 min. So good!

I agree! Roasting veggies makes them taste so good. I also like that I can prep them and toss them in the oven and forget about them while I do the rest of a meal. And let's not forget how good they make the house smell! Here are a few that I really enjoy:

We roast them and stir fry them into various combos (we love curry here too), soups, casseroles, etc.

Since we eat a plant-based diet I try to eat more than just raw veggies and a lot of veggies need to be slighty heated to release the full benefit of nutrients (for example, lightly sauteed spinach has about 290 mg of calcium versus 30 mg if its raw (per cup).
