So, what are you having tonight?

I did chicken tacos in the crockpot. Sooooooooooooo yummy & easy. Just dump a few boneless skinless chicken breasts, a jar of salsa, and a package of taco seasoning. Cook on high for 4-6 hours. We served on tortillas with cheese & sour cream.

THat really looks good! We have a house visit tomorrow morning, so DH took the kids out for pizza, to keep the kitchen clean, lol! I'll be having leftover seaweed salad from the local sushi restaurant.

Oh, Libby! I am totally adding that to my menu this week. Sounds yummy.

I am making homemade pepperoni pizza tonight. Friday is typically always pizza & salad night around here!

We are going OUT to celebrate Wyatt winning Student Body President today. Except it's Lent and we can't eat meat, so we are still deciding where we can go.

Also, I do a version of the chicken tacos in the crockpot but I just add a can of enchilada sauce - that's it. SO good, and I've taken it to people's houses and they rave about it. Makes great burritos too.

We had grilled ham, cheese and tomato sandwiches with some southwest chicken soup from a can. Strawberries and grapes for dessert.

We went to Bob Evans! LOL!

But my friend made that dish for us on Monday. She's been doing a catering thing for busy families Monday-Wednesday. I ordered from her Monday & Tuesday since we were just getting back from Disney & I had nothing in the house.

Homemade alfredo sauce over cheese tortellini with grilled chicken diced in to it and spinach for a side. It was delicious! Dessert is black cherry jello with cool whip.

Oh, these sound great! I'll definitely have to be trying some of these!
Vanessa, I miss Bob Evans! Their biscuits & sausage gravy!! mmm...
The dish was amazing!!!
I ended up making these for dessert! I used butter instead of shortening & they turned out fabulous! The cinnamon was a nice surprise!

I'm on a strict pre-op diet, so that means I'm having a Lean Cuisine szechwan chicken meal.

That's one of our faves too, only we do it in the oven. Coat the chicken, dump on the salsa, toss in a 350°F oven for 30-45 minutes. Yum!

Tonight we had chicken enchiladas with tomatillo sauce. Sooooooooooo good!

Yuuuum, Libby! I'm gonna make that next week for sure!

I'm making Garlic Shrimp in Coconut Milk, Tomatoes and Cilantro. My helper is in there now peeling shrimp, and it just amazes me that the smell of shrimp makes me wanna puke but once it's cooked it's so darn good.
