Favourite green salad?
For all those suffering the cold of winter, we're here enjoying record hot summer temperatures in New Zealand. Don't be jealous Christmas day will be spent at my Mum and Dad's an hour away. Brothers and sisters and their families are coming from all over the place. I've been tasked to bring a green salad for dinner and ambrosia for dessert.
I'm the laziest non-cook ever (honestly, I'm so boring), so I don't really have a flash green salad that will both look AND taste good, but I'm sure someone here will. Would you share with me your favourite salad to take to a BBQ? I said I'd bring a green salad, but I'm open to whatever has been tried and tested and is easy to make. No 7 layer salad concoction for this chick. Thank you in advance!

I make a taco salad:
Lettuce Cheddar Cheese (I buy the bagged mild cheese shredded - less work) Ground beef (normally I do about 1 1/2 pounds) Tomatos/carrots Doritos Ranch Dressing Fry the ground beef, cut up the lettuce, tomatos, carrots. Crush the doritos (I put in a ziploc bag and smash them into little pieces). Now mix everything together and cover in ranch dressing (normally I don't mix together until I arrive where I am going so that everything don't get really mushy). Use as much dressing as you may like. We like it a little runny but somepeople don't.. The combination of the doritos and the ranch dressing is wonderful. |

My favorite hot weather green salad is a spinach salad - a bowl full of baby spinach, cut up some strawberries or to even avoid the act of cutting anything use other berries (blueberries, raspberries, blackberries), a sprinkle of nuts (pecans are my favorite) and serve with a vinaigrette dressing (poppy seed is good or raspberry, etc.) You can sprinkle Parmesan cheese on too if you like.

I like a greek salad. I do these tossed veggies and then add it over a bed of romaine and sprinkle with big chunks of feta.

I make my spinach salad with baby spinach leaves, sliced mushrooms, crispy bacon pieces and thinly sliced red onion, topped with a balsamic dressing. Mm!

My mother-in-law made one this weekend that I think was a mostly kale salad but it had cut up apples and pomegranate seeds in it - it was delicious!!

My aunt used to bring one like this Crunchy Tossed Salad. It was a winner! You could also substitute romaine lettuce. Also, if you don't want to make the dressing, you could substitute with an already prepared "Italian" dressing. But the dressing is really easy to make.

For me, I like to eat the rocket salad, just rocket leaves, some almond slice, a bit of grated cheese and vinaigrette dressing. Yum!

I made this one for Thanksgiving and we all loved it so much, I have made it repeatedly since then. Mixed baby greens, spinach, feta cheese, walnuts, green and red apples, dried cranberries and poppyseed dressing. It's my new favorite.
