I actually did homemade beef veggie soup tonight as I was cold and it sounded so good. With the cooler weather we will do more soups and stews and casseroles.

Fall is here? Where? I don't see it? At least not here in sunny California where I'm still living in 100 degree heat. LOL

We had Butternut Squash Bisque and it was SO good! (Luke didn't like it but I think it's b/c he always asks me what's in it and being the dummy I am, I tell him. He was fine until he found out it was squash.)

We made The Best Tomato Soup You've Ever Had and, well, it wasn't. And it's still sitting on the stove from last night b/c we didn't want leftovers. But maybe you'll like it?

And either tomorrow or Friday I'm making stromboli. Mmm...

I just made a hearty meat ragu & had it with polenta. We're having chicken & dumplings this week and milk braised pork roast next week and beef stew over the weekend.

I can't link recipes because these are all from cookbooks & aren't on the net.

Tonight I'm making a recipe titled "Bob's Kielbasa & Cabbage Soup". I happen to love cabbage in the fall... it's a good recipe. Yummmm...

More things that I tend to make in fall:
Roasted Veggie Medley
White Bean Chicken Chili (I use a jar of Ortega green salsa instead of the can of tomatillos)
Apple Crisp

Do you think Quinoa would be good in chili? My kids refuse to eat it but gobble up my turkey and lentil chili and I was thinking of putting some already cooked quinoa in......

and mari...quinoa and black beans...do you just put them on top or is there more to it?

I'm definitely gonna check out your folder but I'm thinking I'm going to make that Mac & Cheese for dinner tonight.

Right!!! It's October, I'm not too pleased with the 90's weather this week...

but, that's not stopping me from starting my fall favorites. We'll do more soup, stews, casseroles, enchiladas, things that go in the oven that we pretty much abandon all summer.

Tonight, crock pot chili. I think I'll come home and make some cornbread to have with it.

I'm subbing to this thread so I can check back when it actually cools off here. I can't even think about warm food with nearly 90 temps each day.

Yep. Still in the upper 90's here in the Sierra Nevada.

I have though, started adding a few more baked dishes into my meal plans: scalloped potatoes, fresh baked muffins, pumpkin pancakes. I baked apple cake for a church gathering last week.

I haven't gotten out the seriously fall stuff like sweet potatoes or winter squash yet.

I haven't tried this one yet though, but this is the recipe:
http://allrecipes.com/recipe/quinoa-...ns/detail.aspx

If you like couscous, this recipe is AMAZING! I have made it for others and they loved it, too. Read the comments for a couple of changes that work well.

LOL!!! I hear ya! We're still running the A/C, but I have to admit, I've been cooking some fall/winter dishes! I've been baking a bit too!

My family's favorite so far is this:

Crock Pot Cream Cheese Chicken Chili
I served it with rice. Every single person in the family raved about it, so I'm making it again on Friday and doubling it. I'm flying out Saturday morning, so the guys can have some leftovers while I'm gone!

I'm going to make this when I get back:

Butter Chicken

I'm going to make some Portobello Mushroom Stroganoff tomorrow night. I'm not sure if this is the recipe I'll use or not. I'll figure that part out later!! I'll be serving it over Spaghetti Squash!

The problem with some fall recipes is that they are so heavy on calories (like stews).

Favorite healthy fall and winter favorites?
