Default Kale...how do you eat it?

So I bought a bag of kale. I've only had it once before at a party as a greens salad and I'm not sure who made it to ask them.

I tried just roasting it with olive oil, salt and pepper in the oven to make kale chips and while I like them...I can't eat very much since it's still kinda bitter.

So...do you have any other recipes you love?

OH !I love Kale chips. If you make smoothies, put a small handful in raw, and blend well, adding a banana or a little sweetener to help cut the bitter. Adding green to smoothies is very nutritious.

It's all the rage in the foodie world right now, but like spinach, unless it's raw in something, I'm not a fan of it cooked.

Darcy, did I just read that you suggested green smoothie?

Yes, I add kale to smoothies and make kale chips. My kids LOVE kale chips. They beg for it. So, when I buy kale for my smoothies, I have to buy one bunch just to make the kale chips. There are many recipes out there for kale chips besides the basic one(with oil, salt, pepper). My son loves the cheesy one. I would link it to you, but the site is blocked from my work. If you go to rawfoodtalk.com and search for kale chips, I'm sure you'll get plenty of variations.

Besides green smoothies (I don't like bananas so I put in an apple, pear or pineapple for sweetness) and kale chips - I use kale in soups - I have a recipe for a sausage, white bean and kale soup that I can link up later - but it's prob on allrecipes

Just thought about this.. you can dehydrate kale, make powder and then, just sprinkle some in anything you make... soup, pasta, stir fry...

I add it to soups also and to green smoothies (yep, I drink them too and have for several years!). I also like it sauteed with lots of garlic and a bit of chopped onion and sometimes some spices like cumin or chili powder just until it starts to wilt down a bit.

Cooked, mixed in with mashed potatoes. Looks kind of gross but tastes so good.

Can I post a link to a recipe? (I suppose someone will take it down if I'm not allowed.)

Ohh...in mashed potatoes...that would be an awesome way to get my kiddo to eat it.

I didn't even think of the smoothie thing. I normally put in spinach, but I'll try the kale in them too.

with sausage and gravy. once you get over how it looks, it really doesn't taste much different than mashed potatoes, IMO

I've never had it cooked; never even crossed my mind. I'm going to have to try one of these now. We've always just had it with lettuce in salads. We grow it here along with our own lettuces.

Hey - I like green-ish ones - I do kale or spinach all the time. I just don't like those raw foodie slimy green things you like to drink sometimes :P

I usually parboil my kale (cook for 3 or so minutes in a pot of boiling water) and THEN saute it in a pan with a little olive oil, garlic, etc. You can also go the asian route with ginger, garlic, soy sauce. Here's a pin I pinned on pinterest a few weeks ago:

How to freeze (and then cook) kale;

I love Kale! I just bought two bunches today. First of all this is one of the top in dirty dozen so you should buy it organic. Also, I find that the best variety is Lacinato. It has a beautiful leaf and it softer.

Kale Salad: Take the stems off the kale so you just have the leafy greens. Cut the up in small pieces. Mix it with cranberries, lemon, extra virgin olive oil and gueyere or parmesean cheese. Salt and pepper and YUMM-O! I also add red pepper flakes to give it a kick.

It is delish and sooooo good for you!

I hope that helps!

We make the soup Kim mentioned along with other soups (here is an example of a similar soup that we love: http://alittlezaftig.com/?p=2867 ). We also juice it and/or make smoothies.

How does this compare to using spinach? I'm not a fan of spinach, but will use it instead of lettuce in salads. Maybe I should try kale?

The only way I've had it is chopped up and added to boiling water with pasta noodles. Drain and put on your favorite sauce.

It isn't as soft as spinach. It is a thicker hardier leaf. My husband will only eat Kale if I chop it up pretty small. I love it! You should try it. It is delish!!
