Sandwiches/Wraps
Beginning this week, and for the rest of the month, we have baseball games for one kid or the other on Tues, Wed, Thurs, and Fri nights. Ugh. They always interfere with dinner time. So, I'm trying to think up some easy meals that can be prepared either beforehand to be eaten as soon as we get home from games or that can be thrown together really quickly. I was thinking that sandwiches and/or wraps would be great for that kind of thing. But, I don't have very many yummy ideas.
Hit me with your favorite quick/easy/prepare-ahead-of-time sandwich and wrap recipes.

You could do meatball subs with salad. Buy some frozen meatballs and put them in the crockpot with pizza or spaghetti sauce, and then toast up some buns with mozzarella cheese when you get home, and make the salad before hand as well.

We make "pizza sandwiches". Make it just like grilled cheese, only use a little pizza sauce, pepperoni and sliced mozzarella.

We have softball from 5:30 to around 8/8:30 every night of the week except Fridays and Sundays, so I feel your hunger pains!
We don't eat meat so we usually take corn tortillas and slather on some hummus and various veggies. We always have homemade quacamole on hand too to eat in tortillas, or a tomato bruschetta mixed in the fridge to eat on some sliced bread. I keep a salad of some sort made up in the fridge - rice salad, bean salad, quinoa salad, tomato salad, macaroni salad with veggies in it, etc. Easy to just scoop out a bowl and eat whenever. My crockpot gets as big a workout during baseball season as soccer and basketball season - chili, pasta sauces (I keep pasta cooked up in a bowl in the fridge), and even soups like tortilla soup. |

We do a lot of burrito style sandwiches around here. One of my favorites is shredded crockpot chicken (~4 chicken breast, one can rotel mixed with one packet taco seasoning and poured over chicken, rinse out spices with an additional about 1/4 -1/2 cup water. cook~6 hours low and then shred and return to liquid) with whatever toppings you like in a warmed up flour tortilla.

We like to throw cold cuts and cheese in a tortilla and just roll it up that way. Quick and easy. It wouldn't work every night but we do that a LOT when traveling and the kids love it.

Lorie - I've been eating a wrap very similar to that for lunch a lot lately. I LOVE those Laughing Cow spreads! With a whole wheat tortilla and lots of veggies . . . yum!

Here's my basics:
Flavored tortilla (sundried tomato, spinach, jalapeno cheddar) "deli' chicken slices (I like the chunks), ham, turkey Sauce: cream cheese spread, ranch, honey mustard, BBQ sauce sliced/shredded cheese lettuce/veggies 'real' bacon bits BBQ Chicken BLT (BBQ sauce, cheddar cheese, bacon bits, sundried/fresh tomato, lettuce) Southwest chicken (black beans, chicken, sour cream/cream cheese, pepper jack cheese, lettuce, tomato, onion, avacado) Chicken Ranch (ranch, swiss, bacon bits, tomato, lettuce) 'Club" (ham/turkey, swiss, lettuce, bacon bits, tomato, cream cheese) Turkey Delish (turkey, cream cheese, cranberries, lettuce, red onion)

do you all like hummus? one of my go-to wraps is this: hummus, shredded carrots, sliced tomatoes and cucumbers, and a few slices of turkey. and i sometimes add some spinach if i have it on hand.
mom does bbq pulled pork in the crock pot as well. same with bbq pulled chicken. it cooks all day, and then she comes home and shreds it up and they do sandwiches that way. |

I've got Chili Verde in the crock pot right now. It's great in a burrito or just with rice and beans.
We do chicken tacos in the crock pot too...easy to come home, throw one together and go! |
