Default I have discovered the solution to my green bean hatred

<warning this may sound gross>

we need to go to the market like.. yesterday, so all we have left for veggies is green beans-- which I loath. So.. I was making ce's dinner .. peanut butter chicken & green beans.. obviously I don't eat the chicken part.. but thought eh.. let's try some PB on my GB's.. (don't ask how my brain went there.. it may have been the PB Squid comment in the korean food thread LOL).. anyways.. PB, green beans, a pinch of salt....................... and I could eat green beans all day. Soooo much better than anything else I've ever tried to drown them in, and it didn't require a flood on my plate either. Woot.. Mez happy.. even got my protein in without having to make a whole new meal LOL.

Imguessing that since you are a vegetarian you would not like the way we make green beans in the south. Yours doesnt sound to bad though. I saw a chef making P.B. chicken on PBS the other day too. It looked really yummy

i love peanut butter sauce on things like chicken, broccoli, green beans. but I don't know about straight pb.

I also like plain green beans. I think of them as green fries LOL.

Ok if you are a veggie then ignore this....

BACON!! Lots and lots of crispy BACON! and cheese sauce, and bread crumbs and bake them and then pick out the green beans!

Although I do like Green beans Almondine, with fresh string beans and almonds sauted in butter, but not those vile in the can things.

Manda, my southern bred family (tho in southern ohio, both sets of families) they use ham or bacon. My one great grandmother on my mom's side came from Alabama. But hamhocks are in the same family . Boy do I love fresh green beans with bacon and of course, little red potatoes in em too.

Peanut Sauce recipe from Jane Brody

1/3 cup hot water
1/3 cup smooth peanut butter (all natural is better)
2 tsp soy sauce
2 tsp rice vinegar (I suppose regular vinegar would be OK)
2 cloves garlic, finely minced
1 tsp sugar
opt: 1/4 tsp hot red pepper flakes (or more depending on taste)

Blend hot water and peanut butter. Then add everything else and mix well.
Jane serves this over noodles. It is good with chicken, broccoli, rice and even green beans. she also adds scallions. but i never have those.

I know that's why I said it... but neither he nor I have the patience to put it in the oven. So he gets the stovetop version.

I'm with La--bring on the meatless veggies! At first I thought you were dipping raw green beans in pb, and I thought...well, maybe. But now I'm getting the impression they were cooked. Seems like an unusual combo, but whatever works! And truthfully, how could anything in pb not be good? (On a side note, I find it so hard to come up with meat meals for the kids and vegetarian meals for me without making 2 completely different meals. We end up eating a lot of pasta...)
