Default Let's talk fall recipes

Last winter I started adding a lot more vegetarian recipes to our evening meals and this is one of my favorite! I serve it with warm pita bread and sometimes add a few shrimp at the end or pieces of leftover chicken. The spice mentioned in the recipe is easy to get on Amazon if you can't find it locally. It calls for red lentils - don't substitute for green/brown/ or black ones. They too can be found on Amazon if you can't find locally. I can have it on the dinner table within an hour of starting. I'm sure I've made it a couple dozen times by now.

Tracey, that looks delicious!! I'm afraid my guys wouldn't go for it, though, due to the lentils.

One of my favorites is 8-can chicken soup. You literally get it on the table in 20 minutes! It uses canned chicken breast, which tastes good, IMO, in this soup. https://12tomatoes.com/8-can-chicken-soup/

We also love Easy Taco Chili Soup. https://www.food.com/recipe/easy-tac...up-stew-338797 I use two pounds of ground beef (because my hubby and son love plenty of beef). I use no-salt-added cans, if available. For the 14-ounce can of Mexican-style stewed tomatoes, I use a 10-oz can of Rotel.

I also make Cheesy Chicken Pot Pie, but I have changed it up. https://www.myfoodandfamily.com/reci...hicken-pot-pie Kraft has changed the recipe since I started using it back in 2016. It used to call for 1 lb. boneless skinless chicken thighs, cut into bite-size pieces. I use 1.25 lbs. I cook it until done, add the veggies and soup, and then add to the casserole dish. Three cups of cooked chicken seems like a lot, but I may try it next time. Oh, I always leave out the cheese, because we don't want it in the pie. I add 1 tsp poultry seasoning, 1/2 tsp salt and 1/2 tsp pepper to give it flavor.

Lizzie, red lentils are very different than green/brown lentils. They are perfect in soups and honestly, once you blend this, you'd never know the lentils are in it.
