I look forward to going back through this thread and checking out the posted or linked recipes.

Occasionally, I feel tired of preparing/cooking EVERY meal EVERY day. I have never been one to have a weekly menu planned. I've always wanted to, but never stuck to it. I used to work at a grocery store in my 20's and was used to picking up what I needed numerous times a week. Prior to the pandemic, I probably went to the store at least twice a week. Now, I'm ONLY doing an online order and at-the-car pickup once a week and it's certainly new to me. We haven't gone through any drive ups or done any take out or deliveries, etc. So, deciding what to fix every meal every day for the family is a tad tiresome. And wondering if they will have all of the things on the order. (There's been things unavailable each time.)

We had something new the other night and it was a big hit. SUPER simple but tasty! 3-Ingredient Slow Cooker Chicken And Gravy She has the Instant Pot version, too.

We tried this a week or so ago: Beefy American Goulash by Emily Bites It was a hit, too. I think I only used half of all the ingredients.

My husband's favorite side dish (for the past half year) is Instant Pot Potato Salad But, I just add mayo, mustard, dill relish, & bacon bits to the cooked potatoes and eggs. He loves eating it fresh & warm...but will happily eat up the cold leftovers the next day.

If it was cooler weather (maybe where some of you are) I'd make some of this: BEEF, TOMATO AND ACINI DI PEPE SOUP I love that soup!

I didn't want to cook last night so I threw some mini corn dogs and fries in the oven so that I could work out. Easy peasy and the kids were happy to see corn dogs to eat.

Hubby and I went hunting after he got off work...I didn't feel like cooking last night either, so we did Pizza take out for the first time in like 3 weeks.

But yesterday afternoon I took some of the leftover bourbon chicken and made it into WonTon Taco Cups.

Haven't had the potato salad, but we love both of those other recipes.
