Default pumpkin baking season!

what are your favourite pumpkiny recipes? I, personally.. find pumpkin to be vile. However bf and connor have been looking forward to pumpkin baking for .. months, and I refuse to do it until it's the appropriate time lol

Anyway.. I gutted and baked two sugar pumpkins yesterday & have 6 disgusting cups of pumpkin guts to bake with now! hoorah! I figure I'll do the standard, pie, bread and muffins.. but maybe you all have something better I can try instead but. it has to fit into my 6 cup ratio

I do bread, muffins, smoothies, waffles/pancakes, soup, pumpkin snickerdoodles...

How can anyone find pumpkins vile?!!?!? I look forward to October ALL YEAR for this!!! And it's why I have 20 cans of it in my pantry + about that much pureed in my freezer. I NEVER want to run out

Pumpkin whoopie pies with cream cheese filling.... the BEST! (and being in New England you should know what a whoopie pie is! )

lol i didnt even know this was a new england thing.. whoopie pies arent normal everywhere?

LOL - I think they're also a Pennsylvania dutch thing? I just know that I've lived all over the country and very rarely did anyone know what a whoopie pie was and if they did they usually had some tie to New England

Only place I ever see them is Starbucks and honestly - EWWWW. lol I think they're nasty as sin.

My mom makes the most awesomest pumpkin bread ever. Seriously. Everyone who knows her looks forward to it all year. Doesn't taste pumpkiny at all. A guy who I was friends with growing up (well high school+) calls it yummy bread. He's moved away and his first fall away he texted me about what a disappointment the pumpkin bread he got from the store was.

Anyway, she uses the real stuff for all her pumpkin flavored things. She cooks, purees and freezes it all every year. We're probably the only family that still has EVERY SINGLE person (including single 20 somethings, and teens) carving pumpkins. My mom has always insisted so she can have enough pumpkin to cook with.

I have some really yummy mini tarts coming to my blog soon, but they're not quite ready to be posted yet (still finishing up the photos, since I literally JUST got them out of the oven).

From last year, this one was really popular, even among people who didn't like pumpkin pie, because it was so light and airy. It's the thing everyone requests for Thanksgiving and other family functions. No pumpkins were harmed in the making of the recipe, which uses pumpkin spice pudding...

Darcy, I'm a pumpkin hoarder... I have as many pantry cans as you, my own purees, plus I stock up on anything pumpkin. I still have a few Pumpkin Spice frosting creations packets from Duncan Hines last year, plus I've already bought like.... 8 boxes of the new Pumpkin Spice cupcake mix they came out with this year (it was one of the items we got to taste when I was at the headquarters a couple of weeks ago, so as soon as I saw it on the shelves, I bought about 1/3 of the boxes they had... and have bought them every time I went back since). I've also got a couple boxes each of anything pumpkin from pumpkin bars to pumpkin cookies... I'm an addict. It's unhealthy. Send help!

I'm with La, pumpkin is nasty. But alas, my boys love it, so I bake. Usually just pumpkin bread and pumpkin/chocolate chip muffins but sometimes I'll get bored and make pumpkin bars.
Honestly I don't mind baking with it, because I'm never tempted to eat any...

haha.. that pic frightened me.. LOL. i'm not a cake person and just couldn't wrap my head around layers of cream cheese frosting/filling AND pumpkin ever being tasty.. LOL.. i'm sure kiddo and bf would inhale that thing though hahah

this is also why i'm starting to add nuts to things lol. nothing like an allergy to stop you from eating all the goodies you make

My mother has been making Pumpkin Mousse for years. It's always the most requested Thanksgiving dessert, and it's so easy. Many people who don't like pumpkin pie do like this. We have an older variation of the recipe that uses regular instant pudding and regular Cool Whip instead of the light versions I'm linking to, but it's an easy substitution if you'd prefer the regular.

I love pumpkin anything. But I'm not a big baker except at the holidays, so most of these recipes I haven't tried. I love collecting them, though!
