We haven't discussed dinners in a while. So what's for dinner tonight or this week??

I took out chicken but not sure what I want to do with it.

Lots of pasta. I just bought different pasta, assorted meat (chicken, Italian sausage) and stuff like olives, artichoke hearts, San Marzano tomatoes, peppers, mushrooms, onion garlic and fresh herbs.... I'm just going to wing it.

Also, one night we are having tuna melts, another we are having homemade soup with caprese salad.

We are having salsa chix in the crockpot: black beans, frozen corn, a jar of salsa, & chix. A half hour before eating, add a stick of cream cheese. Voila!

We serve it over rice. It's awesome.

tonight we are cheating...easy cause we are suppose to have soccer practice so popcorn shrimp and veggies of some sort...

homemade mac and cheese and steak tomorrow, chicken Thursday and homemade pizza Friday

I have ground beef out for hubby and I - no idea what I'm making with it. Maybe low carb meat balls served with zoodles and some marinana plus salad.

Last night we had good old grilled chicken that I marinated with balsamic salad dressing and it was so good. We all had it in salads today for lunch - yum!

I have no idea for the rest of the week. Just not in the mood to menu plan.

I prepared all our meals for the week (lunches and dinners), which were:
- Stuffed pepper soup
- Tamale pie
- Maple peanut soba noodles
- Smoky red lentil soup
- Chili sweet pepper wraps
- BBQ bean tacos

I think I'm having the stuffed pepper soup tonight

Crock pot French Dip sandwiches for tonight, and I'm doing coconut chicken tenders tomorrow night. Thursdays are always breakfast for dinner, so I don't usually plan ahead for that, and Fridays are leftovers.

How did you prepare them in advance? Do u freeze them afterwards? And most importantly, how long did you spend cooking ALL of them at once?

Tonight the kids and DH had teriyaki chicken and Italian bread. Tomorrow is leftovers, so chicken and pasta. Thursday is breakfast for dinner, and Friday is turkey burgers. I'm about to make myself a meat substitute for ground beef that I'll cook with mushrooms and onions. Some nights I'll eat it over salad with sour cream and salsa, and some nights I'll have it over spaghetti squash.

Sunday was Crock pot Gluten Free White Chicken Ranch Chili and it was soooo good.
Monday was Pizza night.
Tonight was Baked Ham, sweet potatoes, green beans and mac and cheese.
No idea about Wed and Thurs
Friday is dinner out for family dinner night.

I spend about 2 hours every Sunday batch cooking the meals. I shop the day before and lay out my plan the night before (listing out the things that take longer to cook like rice, any potatoes that need to be baked, etc.) Then I start my batch cooking by putting on the longer things first - this week it was rice, lentils, and baking sweet potatoes. Then while those are cooking I just start cooking each meal. I put them in containers and label them with masking tape and toss them in the fridge. They all keep for the week in the fridge just fine - since there's no meat in them they last just fine for up to 10 days

Yea I failed tonight. Had an idea and then bam.....nothing lol. So tomorrow's dinner will be something with chicken.

I used to plan and prep my own meals a few months back to help with weight loss but fell off the wagon when I got sick. I really need to get back on it though.

BBQ ribs with baked beans and corn

Tostadas were made tonight and tomorrow we will have salmon patties. We are catholic so no meat on Wednesdays or Fridays until Easter. Not sure what we'll have on Thursday.

I cooked yesterday and today I just refused with my head still hurting the last week. We went to Qdoba and got tacos and quesadillas and my daughter had pizza.

I'm having a vegetarian (unless you count fish) week this week. So far we've had:
- Sweet potato, corn and zucchini fritters with salad
- Tuna, noodle and egg salad
- leftovers of the above

Tonight I'm making a buckwheat risotto (with mushrooms and sage) - I've never tried it before so I hope its good!

I couldn't be bothered tonight, so I seasoned some chicken breast and vegetables (sweet potato, broccoli, bell pepper, carrot), threw them in to a baking dish and put it all in the oven. Quick, easy, tasty and only one dish + plates + cutlery to clean up.

Last night we had green salad (lettuce, cucumber and green onions) and sandwiches made of flat bread (not tortilla though). I put shredded mozzarella and regular cheese with a few slices of salami. I used the sandwich press to make them even thinner and to melt the cheesy stuff.
Tonight it's green salad again but this time with pork made in the crockpot.
Tomorrow I plan to make fettuccine with marinara sauce with fresh basil.
I made fruit salad for dessert the other day -- it was super yummy and the easiest thing in the world - I cut 2 apples, 3 oranges and 3 bananas in little chunks. Then added 1-2 spoons of real honey. If you let it sit for a while it becomes juicy. You can add nuts and/or dates too.
For the next days I have no idea. Hubby asked for home made pizza but I don't feel like making and kneading dough and I don't like the pre-made ones.
I like the Crispy Cheddar Chicken because it's delicious and not fried. I don't make that sauce though.
We eat grilled salmon occasionally too.

As I'm the only one at home for dinner at the moment its been hot dogs. I'm out all day tomorrow til 8.30pm so will probably have dinner out, the rest of the week I have no idea....

cereal....hubby is sick and I was too comfy on the couch all bundled up in my blanket. The boys voted for cereal and protein shakes!! Works for me!

I made Cinnamon & Chili Pork Tenderloin Tuesday night:
. We had it with rice & green beans.
Then for lunch, I added the pork & salsa to salad; SO GOOD!
Tonight I'm going to put it in quesadillas. One of the commenters said it was delicious.

We had spaghetti and meatballs last night and....leftovers tonight. I had chicken out but it didn't happen. Sigh. I'm so bad at meal prep. Wish I had a bunch of easy, fast recipes that the kids liked!
