Smile Do you have a favourite pumpkin recipe?

It's usually still full summer here in August. Not this year though; fall has come early. I can't complain though. We've had an amazing summer! But, this rain and chilly air has me craving all things pumpkin Today we're baking a pumpkin cake. (using this recipe for pumpkin muffins) Yummy!!!

So, do you have a favourite pumpkin recipe? wanna share?

We love these Betty Crocker cookies. This is an old recipe my mother-in-law made when my DH was a kid.

You can make it as is, or substitute a bag of mini chocolate chips for the raisins. That's they way we always make them!

I also make these pancakes. Not sure where the recipe came from. But it's a good way to get 'pumpkin' into kids when they don't know it!

1 cup flour
1 Tbl baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp nutmeg
2 Tbl brown sugar
1/3 cup pumpkin puree
1 lrg egg
7/8 cup milk
1/2 tsp vanilla
2 Tbl butter, melted and cooled

Combine dry. Combine wet. Mix together. (Add a little milk if needed to thin when making waffles.)

Pumpkin Bread Pudding

1 1/2 cups whole milk (Or 1 cup heavy cream plus 1/2 cup whole milk)
3/4 cup canned solid-pack pumpkin
1/2 cup sugar
2 large eggs plus 1 yolk
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground allspice
Pinch of ground cloves
2 tablespoons bourbon (optional)
5 cups cubed (1-inch) day-old baguette or crusty bread
3/4 stick unsalted butter, melted

Preheat oven to 350°F with rack in middle.

Whisk together pumpkin, cream, milk, sugar, eggs, yolk, salt, spices and bourbon, if using, in a bowl.

Toss bread cubes with butter in another bowl, then add pumpkin mixture and toss to coat. Transfer to an ungreased 8-inch square baking dish and bake until custard is set, 25 to 30 minutes.
