A individual size four cheese DiGiornio pizza & a couple Reese's peanut butter chip chocolate brownie cookies. *lol* Doesn't that sound de-LISH?! Not sure how motivating it is, however...

I'd like to have chinese food but I have a feeling dh is not going to go for it so I'm guessing leftovers or maybe spaghetti if I get super fancy. LOL

Mmmm we're having bbq chicken and black bean burritos with a side of rice w/diced tomatoes and lots of yummy seasonings. I'm very excited because it's so so easy to make and SO yummy!

The boys are having cod nuggets, tater tots and grapes because we have to leave in an hour for a baseball game. I had mac & cheese at 2:30 so I'm not hungry and I'll give DH a couple of hot dogs from the concession stand which I'm working in! LOL!

BBQ Chicken and Black Bean Burritos

This is one of our favorites. It is so quick and easy so SO yummy. We use less chicken (because it's really just the 2 of us eating) and there is enough for us to have 2-3 each. Anyway, it is SOOOOO good. And I'm usually lazy and skip the onion.

3 boneless chicken breast halves (about 1 lb)
1 small onion, chopped
1 Tbsp Oil
1 tsp. bottled minced garlic
1 can (15 oz) black beans
1/3 cup bbq sauce
1/2 cup shredded cheddar cheese
4 large flour tortillas
sour cream

Peel and dice onion; set aside. Heat oil in skillet over medium heat. Cut the chicken into bite-size chunks, adding each chicken breast half to the pan as you cut it. Raise the heat to medium-high. When all of the chicken is added, cook for 2 minutes, stirring occasionally. Add onion and garlic and continue cooking, stirring frequently, until the chicken is no longer pink in the center, about 5 more minutes.

Rinse and drain the black beans. When the chicken is cooked through, add the beans and bbq sauce to the skillet, reduce heat to medium and stir well to coat the chicken with sauce. Sprinkle the cheese evenly over the skillet and continue to cook without stirring until the cheese melts.

Warm tortillas. Spoon equal amounts of the chicken mixture in the center of each tortilla, dollop with sour cream, and roll up burrito style. Serves 4.

i have decided to make baked teriyaki chicken, rice and either broccoli or edamame (both currently in a frozen state).

I tossed the chicken breasts in the freezer for another day and we had pancakes and scrambled eggs for dinner instead! Rob's not going to be home for awhile so I didn't feel like fixing a big dinner for me & the kids so he can fend for himself when he gets home lol!

I'm back!

Yes, I have 5. The last one was a whopper, though.

We went out for dinner last night because it was #4's birthday.

But honestly, I only cook about one dinner every 2 weeks. There's just no time. But, we have carry out down to a science. I can feed all 7 of us for under $30, usually closer to $20.
