Ugh, I haven't thought much about the week ahead. I need to get on the ball.

I know I'll make spaghetti sauce one day this week because I bought the ingredients like 3 weeks ago and haven't gotten around to doing it yet. I'll probably also do my fave meal of black bean burners/buns/sweet potato fries at some point just cause I've been craving it.

Other than that, NO ideas.

Tonight is chicken parm. Since I am already boiling water for pasta tonight, I will also make a tuna pasta salad for lunch tomorrow.

Will probably make chicken and rice mid week and also make extra of that to turn into a soup that I will freeze in portions.

Not sure the rest of the week. I would also like to do some freezer cooking.

We had chicken spaghetti & steamed broccoli tonight.

Tomorrow we're having grilled chicken, black eyed peas & mashed potatoes.

I baked Pineapple bread tonight for the first time. If I hadn't burnt the bottom, I'd give it two thumbs up, but I think I still like banana bread better.

Still just me at home, but will have my daughter and her BF Friday to Monday and my son COMES HOME on Sunday night.

I'm having tilapia, roasted potatoes and roasted asparagus tonight.
Getting stuff for salad and whatever looks good for the rest of the week. I'm getting sick of just cooking for me. One night I had cereal with fruit.

I'd eat junk every night if I didn't have anyone to cook for. Yeah for you for eating healthy!

No menu planned for this week - we're much more lax in the summertime but school starts in 16 days so I'll be planning again soon.

I do know we're having taco salad tonight though and cashew vegetables and rice tomorrow night.

Tonight was Bar-b-que chicken, stuffing and broccoli. I baked extra chicken and made chicken salad up for dinner tomorrow. We will have it with croissants, and mixed fruit; cherries and grapes and melon. Wednesday is turkey sausage in sauce over pasta. Thursday I am getting my hair done, so it will be takeout from the local bar and then Friday will be whatever left over you can fix for yourself cause mom isn't cooking.

The weekends are always played by ear. If I don't feel like cooking I don't. My son is 22, half the time if I cook, I get a text that says, gong out to eat with friends, so I really don't worry about it too much.

Gosh, I wish I had the time to put together a menu! I just got back from a 10 day vacation and today was my first day back at work ... my husband has been doing most of the cooking lately (no complaints from me)! We had really yummy chicken thai curry tonight.

Last night we had Sesame Chicken, Zucchini, Onion, Mushrooms and Rice (my take on the Japanese restaurant meals)

Tonight is Pork Chops, Butter Noodles and Creamy Cauliflower

The rest of the week I haven't decided yet so I'll be looking over this thread for ideas.
