Question What's for dinner!?!?!

I'm getting read to start cooking and I was just wondering what everyone else is having!?!!

We are having:

Salad (just the Romaine blend you buy at like Giant Eagle)
Mini turkey Meatloaf
Baked Sweet Potato Fries (Just the Ore Ida Brand).
Cheesy Cauliflower

I'm so hungry.......drool

We have so many Superbowl party leftovers - pizza, queso, chips, jalapeno cheddar dogs, veggie tray, buckeyes, etc. I may not have to cook for a couple of days!

Pot roast with potatoes and carrots in the crock pot. DH isn't much of a meat guy, so he'll complain, but I do like this particular meal every once in a while.

It's date night and we have a gift card to The Keg.

We're having taco soup tomorrow, red chicken curry on Wednesday, and GF, vegan baked mac and "cheese" on Thursday.

YUM!! I love breakfast for dinner, but my husband just cannot wrap his mind around that concept so we never do it. That sounds like the perfect evening meal to me, though!

Kids and DH are having:

parmesan chicken
home baked oatmeal wheat bread with margarine
steamed carrots
sliced apples

I'm having a salad with goat cheese, Quorn (vegetarian chicken substitute), and apples and some of the bread.

We're having gorgeous weather too & I would LOVE to grill..except the BBQ is broken. I just got back from grocery shopping, so I should know... but not quite sure yet.

I'm thinking maybe, possibly something pasta. ?!?

I'm experimenting tonight with a recipe from a new cookbook. Pork, apple & sweet potato shepherd's pie. We'll have to see how it goes over with everyone!

We are having what we have at least once a week...I call it "Whatever" - whatever you can find. But mostly leftovers from yesterday...my 4-day headache can't take any cooking tonight after working all day.

we had tequila-white-chicken-chili it was pretty good over rice with fat free sour cream, fat free cheese, and a little avocado.

the boys had grilled chicken, rice, and carrots.

I'm on the other side of "today", but last night my husband fried shrimp in his new deep fryer and we had po boys. Yum! Tonight we're going out for seafood. Three cheers for living on the ocean!

We had homemade veggie burgers with a black bean, edamame, and wheatberry salad and some fresh asparagus sauteed with EVOO and minced garlic on the side.

no superbowl leftovers ... pooh dh ... I didn't make anything specifically for it like I used to. lol ...actually neither of us needed the calories ...

I dunno ... I have a 1 pound breakfast sausage in the frig thawed out and 2 pounds of hamburger ... maybe biscuits & gravy or ??? I'm open to suggestions...

I was up until almost 2am working on the robotics team's t-shirt and woke up with a splitting headache ... so not in the mood at the moment to cook...so something easy would be nice ... I will prob go to bed early tonight!

Dawn, it was delicious!! I posted the recipe to food.com so it's easier for me to find again later.

Just a note--I only used ½ cup of the applesauce because I misread the recipe. Honestly though, it was fabulous anyway. I think the full cup would have been overpowering.
