Thumbs down Help! I have this chicken...

that I asked my helper to clean out and de-skin and specifically said DO NOT CUT IT UP, yet when I opened it up to make a roasted chicken, discovered it to be, in fact, cut up into pieces. What do I do with it?

That's right folks, I've never cooked a chicken that still had its bones it in. Laugh all you want, just help a girl out with a recipe PLEASE!

You are WAY unhelpful. I dunno if you know this or not, but apparently chickens have guts and stuff inside of them that make me gag when I try to take out. And the skin makes it all greasy. So, yes. I asked her to get rid of the yuck. Not cut it up.

Got any rice krispie's (or something similar?)? You can make "fried" chicken with it. Mush the rice krispies up a little so they aren't like, big chunks, but don't mash them into a powder. You just want smaller pieces than it comes in. Mix up milk and 1 egg in a bowl. Dip chicken into milk and egg, then cover with the rice krispies (if you want really crunchy, do this process twice). Stick them in a pan or on a jelly pan (the juices do come out a bit, so a cookie sheet won't do) and stick them in the oven and bake them up.

ETA: I googled rice krispie chicken and this site has a whole mess of recipes, if you're a strict recipe kinda gal. Also? Corn flakes work pretty well too, in case you have that instead.

sprinkle them with some salt a little pepper and some rosemary, plop the pieces in a pan sprayed with Pam and bake them for abot 40 to 45 minutes. thjrow in a side of potatoes and a veggie and tada......dinner!!!

Gotcha.....sorry was just trying to make a funny this morning. Sorry if I made ya mad.

You can always just roast it in the oven. Throw in some tatos and carrots. When it's getting close to ready, make up some cream of chicken or cream of mushroom gravy to pour over the tatos and carrots. My kids love the drumsticks, so just give the kids a drumstick and eat it like you would fried chicken but, with no fried skin.

I also just bake mine sometimes in the oven with a little seasoning and then you can serve with just a few sides like rice or vegetables.

You can also bake the chicken like above and then pull it off the bone...and mix it up into a casserole of some sort. And if that interests you....I have tons of casserole recipes.

I opened this thread because it looked full of win with Kellie starting out needing help with "a chicken..."

I was simultaneously amused and grossed out. Then the thread actually proceeded to discuss COOKING...wth? What sort of thread did I open? I am now Forrest, running like the wind.

On a related note, I, too, refuse to cook/eat anything with bones.

you could always boil it til it came off the bones..then make soup or something

I bake chicken with bones all the time...my kids love legs and dh prefers thighs...Do you have any italian dressing? Could always just toss the chicken in a pan, cover with some dressing and bake til done

And then keep the bones and make broth! So good for you and good in so many recipes that call for cooking liquids (rice or cous cous made from homemade meat broth is da'bomb-diggity!).

But you won't go there, will you LOL But I agree with you on the guts. The real food movement is really behind eating organ meat, and I just can't get behind that. The liver is a trash can for the body, and you want me to eat it?!

I'm with everyone else. Rub some herbs and sea salt on it, toss it in the oven on a bed of sliced onions (or sliced oranges if you like a little citrusy flavor), add some cut up root veggies and roast it. Then nosh on some fab meat! Meat from bones is more flavorful when roasted than boneless meat, so you'll really enjoy it!

Whew.....so glad....would never want to upset anyone of the peeps here that I wub.
I also didn't realize you are in another country...like Asia. Knowing the cultural difference helps. See I'm a country girl...so when you say helper clean and de-skin, here are the thoughts that come to my mind: hunting, fishing and farming.

Toss it with red potatoes, grape tomatoes (or cherry, halved), fresh mushrooms, olive oil, sea salt and fresh rosemary. Place in in a single layer it in 2 13x9 pans (or 1 15x10 rimmed) and bake until the potatoes are done. Delish! And 2 meals in one!

Oh yes, Chicken with bones in is actually much more flavorful than without. You could wrap the chicken pieces in foil and roast in the oven for about 45 minutes to an hour. Once the chicken is done, remove it from the oven and cool. Now you can just pull the meat right off the bones and make all kinds of things.

Chicken Salad

or my favorite:

Chicken White Bean Chili


1 onion chopped into big pieces

3 diced jalepeno peppers

2 LARGE cans of white beans (Cannellini beans)

1 clove garlic minced

Chicken

sour cream

olive oil

chicken stock

1 TBSP oregano

1 tsp cumin

1/2 LB of shredded monterey jack

Bake chicken for about 45 minutes completely wrapped in aluminum foil at 350. This will keep chicken moist. Cut into bite size pieces.

Saute onions and peppers in olive oil. Use pan/pot you will cook chili in. When onions are translucent, add the garlic and saute for just a minute or two. Next, add white beans with juice. Also add cooked chicken.

Add chicken stock about 2" above the beans. (I use about 1 large box of chicken stock.)

Add all seasonings and simmer for about 1/2 hour.

Turn flame down and add cheese, a little at a time, stirring constantly. I serve with tortilla chips and a dollop of sour cream on top. Recipe says that it tastes better with each heating so don't reheat in bowls, heat the whole thing up like lasagna.

This recipe comes out more like a soup than chili. If you add more cheese and use less chicken stock, it will be thicker. Also, I like to give it a little kick, so I used Pepper Jack cheese. But that makes it very spicy. I think the secret ingredient is oregano, so I add a little extra.

funny...I am cooking chicken today too..
Easy Peasy Casserole with no name..and not fat-free either
Boil your chicken
Debone and shred into bite size pieces
mix one can of cream of mushroom (or chicken--whatever you have on hand) with one 16 oz of sour cream
when mixed well add your deboned chicken
pour into a baking dish
crush up Ritz-type crackers and sprinkle over the top--about a sleeve and half works for me
Melt some butter and pour over the cracker crust or you can just dab small pats of butter over the top
Put in a 350 degree oven till hot and bubbly...approx 30 mins.

You can also vary this up by adding some mixed vegatables to it to make it chicken pot pie like.

I agree with alot of suggestions. Bake with some herbs, water, and veggies. Fry it up. I often substitute boneless chicken for bone in because my Dh refuses to eat anything off the bone!

I'm not much help either... I make my hubby do the turkey yearly with all the guts and stuff. Only once I did a chicken with bones in... my super simple recipe is chicken in crock with season salt all over... tastes just like a rotisserie one from the grocery store.

Marinate it in italian dressing, then bake it with some potatoes, carrots and celery. Yummo!

Lol well we don't eat chicken with bones in it but I LOVE bbq chicken (or just regularly seasoned chicken) tacos. I just cook the chicken in the oven and then shred it up (your case pull it off the bones ) and either mix it with the bbq sauce or just start makin tacos lol. My sister loves it when I get taco seasoning mix (I use a cheesey taco mix) before adding it to the taco fixings.
