Copy Cat Recipe

Description: JOURNALING: Stouffer's Foods used to sell Welsh Rarebit cheese sauce that I really liked. Unfortunately, they stopped selling it in 2021. Just recently I found this copy-cat recipe from the Wimpy Vegetarian website and decided to try it. I'm glad I did - yummy! I like it served overe toast topped with chopped broccoli and bacon - delish! 11/14/24 Ingredients: 1 Tbl unsalted butter 1 1/2 Tbl flour 1/4 C milk 1/2 C dark ale 1 tsp dry mustard 2 tsp Worcestershire 1/8 tsp pepper 6 oz grated Cheddar dash cayenne pepper 1 egg yolk Directions: Melt butter overe low heat. Whisk in flour; cook until thickened and lightly toasted, (2 minutes). Whisk in milk and allow to thicken (1-2 minutes). Whisk in ale, then mustard, Worcestershire sauce, pepper, cheese and cayenne. Simmer over medium-low heat while whisking until a smooth sauce develops (2-3 minutes). Remove from heat. Whisk in egg yolk to get a velvety sauce. Serve immediately. Description: JOURNALING: October 17, 2024 My sister and I attended "THE WAITING Book Tour", an evening with award-winning crime writer, Michael Connelly hosted by Gramercy Books at the Columbus College of Art & Design. A copy of the newly published novel was included with the ticket. Mr. Connelly, with grace and humor, reviewed his 12 years as a police beat reporter and his transition from journalism to writing novels. He also discussed the Bosch TV series and how actor Titus Welliver was chosen to play the title role. Fascinating, enjoyable evening. Description: JOURNALING: 10/18/24 - I love to read. In 2009, 2 years after its launch, I saw my first Kindle e-reader in person and "never looked back". In the last 15 years I have collected almost 1000 titles in my Kindle Library. I now own a small kindle that I can tuck into my purse to pull out when I have a few minutes to read - it makes waiting in line or at the doctor's office a delight instead of an irritant. I prefer "cozy mysteries" and "police procedurals" and every now and then will read a non-fiction title. But recently I joined a book club to "force myself" to read other genres. CREDITS: PHOTOS - by Adam Cairns of the Columbus Dispatch, KAPOH, and me; KITS - "8 on 8", Traci Reed; "Let's Play Soccer", Red Ivy Designs; "Kickin' It", Meagan's Creations; FONT - Constantia JOURNALING: On October 2, 2024, I was privileged to sit int he stands of Lower.com field to watch the "greatest of all time", Lionel Messi, play the "beautiful game". Unfortunately, he and his team, Inter Miami, were playing "my team", the Columbus Crew. Although the Crew eventually lost 3-2, Messi played the entire game and scored two of Miami's goals. (Yeah, the loss was worth it!) UNDER HORIZONTAL PHOTOS - Lionel Messi slipped one past the right leg of Crew goalkeeper Patrick Shulte to open the socring at the end of the first half. Messi celebrates his second goal a few minutes later on a free kick in first half stoppage time. UNDER VERTICAL PHOTOS: Messi during warm-up period. Lots of standing around, but when you are the "GOAT" that's OK. But, watch out when he starts to move - it's the "beautiful game".
