I really am trying to feed myself and my family well. I know what I'd like to be doing - cooking all our food from scratch using fresh, wholesome ingredients including lots and lots of veggies. How am I doing? I'm doing better than I was a year ago. I'm making small improvements on a regular basis. But I'm still falling very short of where I'd like to be. Why is that? I can blame some of it on the government - it's not legal to buy raw dairy in Virginia. Some of it has to do with money - buying organic veggies and pastured meats is more expensive. Mostly it has to do with what the rest of the family is willing to eat (not a lot of veggies) and my general laziness. I've found that I like to cook, although working up the energy to start making a meal is tough sometimes. What I don't like is cleaning up after myself. And when I've been cooking, there are lots of dishes to be cleaned. And I haven't found a lot of veggie dishes that everyone is willing to eat. What I should do is make a big salad to go with every meal. That would help us get our veggies, but I don't like to chop up veggies all that much so making a salad every day isn't something that I enjoy. And even in salads, there aren't a lot of veggies that everyone else will eat. It's all so frustrating. I really just need to keep plugging along finding dishes that I can make that my picky family will eat and then spend Getting the right nutrition is important enough that I need to spend the time to do right.
