Yummy Recipes for Gluten Free Desserts and Main Dishes

I put myself on a gluten free diet hoping it would help my energy level following my cancer treatments. I am thinking I may have a gluten sensitivity. Do any of you have any yummy cookie or dessert recipes?
 
If you don't feel like baking, ChocZero has gluten-free goodies. I'm expecting my shipment any day. :)
I love Choc Zero! They are sooo good! I bought some of their hazelnut truffles for Valentines and they were fantastic. At Christmas, I ordered their tin of butter cookies. They were also yummy! I have bought some of their goodies from Amazon.

i love love nom-nom paleo. I have slowly reintroduced gluten back because of sensitivities but I still make lots of things gluten free. You need to watch out for sauces that are pre-bought

if you like asian inspired dishes you'll probably like them

She has desserts as well on her site :)

I don't use cookbooks anymore but i kept the one i bought from her because it's just a really fun cookbook with lots of photos :)
 
@EvelynD2 - I've had to eat gluten free for the last 16 yrs and can pretty much make anything gluten free at this point.

If you are thinking you have a sensitivity I'd encourage you to chat with medical provider and be tested for Celiac disease prior to eliminating gluten from your diet since it can only accurately be testing while eating gluten. It's important to know how strict you need to be - ie. is cross contamination a risk for you (gluten is a nutritional and cancer risk for people with Celiac for example due to the inflammation it causes)? In that case, it's critical to even use a separate toaster and separate jelly jar/peanut butter etc.

If you are doing it for energy levels I'd look at glycemic index of foods. Be aware that many things that are prepared to mimic gluten sweets and treats are going to be higher glycemic index than traditional treats because the flours they use are not very good for you (wheat flour is actually healthier because it has more fiber and vitamins). However if you are making treats that are low in sugar and avoiding GF flours you'll get the desired effect of more energy: less of a crash after having foods with high glycemic index (that make your blood sugar soar). Try looking for recipes that use almond flour instead of the gluten free substitutes that contain rice, corn, and tapioca. They won't be exact dupes but they will make you feel better.

here is one I've made from insta - oats (use gluten free) and almond flour - it's still sweet from honey, so not perfect for blood sugar, but better than sugar and flour. The oats buffer it with the fiber. You can see how you feel and just have a small portion.

Thank you so much, Kristin, for the great advice and for this awesome recipe! I have a physical next month and will talk to my doctor about some of my concerns. It all could just be due to the after effects of my chemo and radiation. I really don't know. I'm just trying to rule out things. My sister-in-law said she went gluten free because she felt better so I thought I would try it to see if it helped. I don't know how long it takes to feel better once you get off gluten.

Whatever the route to feeling better, I hope you find it! Going gluten free may well provide relief, as breads and pastas, cookies and cakes all tend to be inflammatory foods in comparison to veggies and proteins, but you may get relief by just making your plate more full of salads and veggies with fewer carbs - more balance there and get the same results without the pain of truly shunning gluten (looking for work-arounds when you are having carbs). The absolute best cookbooks I found/have for tasty gluten free recipes are the Americas Test Kitchen ones. They are always super involved and can take extra time to do things the way they want, but they are always good. A lot of the time I think it is too much, but the GF eating isn't as necessary health-wise in my kitchen usually.
One of our now favorite recipes is their Mexican meatloaf that uses ground corn tortillas for the binding. Their lasagna is really excellent as well.
There are two ATK GF cookbooks (Vol 1 & 2) - here is a link to a version that has both in one book. We tended to like more of the recipes in Vol 2.

I eat mostly gluten free but can tolerate some wheat b/c I am sensitive but not celiac as one daughter is. My other daughter is being tested next wk. FYI...she was told that there is a better test nowadays that doesn't need carb loading beforehand. I don't eat a lot of desserts, b/c of inflammation I keep sugar to a minimum but when I do bake I use gluten free flours and monk fruit/stevia/erythritol sweeteners and honey. Here's an oatmeal ball recipe I make a lot and you can customize it, add in cinnamon, raisins, choc chips not necessary, use any nut butter you want and use gluten free oats. I love these. I make a batch, freeze half and keep the rest in the fridge for the week.
