I have the BEST recipe that uses a pudding mix. They are always extra soft and so yummy! If you ever need something different, let me know!

Already had it typed up too! this recipe makes a ton, I always half it and it's about normal.

Super Soft Chocolate Chip cookies

Ingredients:

4 ˝ cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 ˝ cups packed brown sugar
˝ cup white sugar
2 (3.4 oz) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

Directions:

1. Preheat oven to 350 degrees F. Sift together the flour and baking soda, set aside.

2. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.

3. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

(I also like to use chocolate pudding instead of vanilla and peanut butter chips instead of chocolate chips—or you could do chocolate and chocolate)

Oooh, Sarah! I might try that! I am always a fan of choc chip recipes that use more brown sugar than white.

My favorite recipe is called Ultimate Chocolate Chip Cookies. It's from Butter Crisco. (I have a Bosch mixer, so I always double the recipe--seems to mix up better. And who wouldn't want more chocolate chip cookies?)

3/4 c Butter Crisco
1 1/4 c brown sugar (key ingredient here--makes all the difference!)
2 TBSP milk
1 TBSP vanilla
1 egg
1 tsp salt
3/4 tsp baking soda
1 3/4 c flour
1 c chocolate chips

Heat oven to 375 degrees F. Combine Crisco, brown sugar, milk, and vanilla in a large bowl. Beat until well-blended. Beat egg into mixture. Combine salt, flour, and baking soda and mix into creamed mixture. Stir in chocolate chips. Drop rounded tablespoonfuls of dough onto ungreased cookie sheet. Bake for 8 to 10 minutes, or until golden brown. Cool.

It says it makes 36, but even with one of those little cookie scoops I only get about 30 cookies per batch.

Note: Sometimes I add up to 1/2 cup more of flour, if the batter seems wet. (I live in the desert, and this only seems to happen when it's raining outside.)

Good luck!

Well if you want something a little different then you should definitely try this recipe! Even though there is pumpkin in them you really don't taste it, but they are oh so yummy and really soft and chewy! When I make a batch of these they don't last long at all in my house!

Pumpkin Chocolate Chip Cookies

1/2 C shortening
1 C sugar
1 C pumpkin
1 tsp vanilla extract
2 C flour
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp pumpkin pie spice
1 C butterscotch chips
1/2 C white chocolate chips
** You can also use regular chocolate chips. Your total amount of chips should be at least 1 1/2 Cups. You can mix and match however you like.

Preheat the oven to 350 degrees F. Grease your cookie sheets. Cream the shortening and sugar. Stir in the pumpkin and vanilla. In another bowl sift together the flour, salt, baking soda, baking powder, and pumpkin pie spice. Add it to the pumpkin mixture. Add in your chips of choice. Drop dough about a tsp at a time onto cookie sheets. Bake for 8 to 10 minutes. Let your cookies cool before taking them off the cookie sheets.

I've been making pumpkin chocolate chip pancakes to try to use up the pumpkin. These cookies will be even better I bet! thanks!

I think I'm gonna give these pudding ones a try I'm gonna check what I have vs what I need when I get home. I have to go out and run a few errands tonight anyway, might as well stop at the grocery store while I'm out
