Default NSBR...side dishes

I feel like my family is in such a rut! We eat the same side dishes over and over. I need some new ideas for a non-veggie loving group. Plus I work outside the house so I need fast but not nessicarily boxed/processed food.

Our usual side dishes are:
Yellow rice, black beans, corn, mac n cheese, stove top, french fries, steamed broccoli, salad, canned fruit.

What do you serve as a side dish that your family loves?

These usually work their way into our menu at least once a week..super easy, fancier than a baked potato and even my kids will eat them..and that's saying a lot b/c I've got some serious picky eaters...

we do new potatoes, green beans, with some onion and bacon thrown in for flavor.

and besides regular veggies.. we're in a rut too! LOL

we eat mashed potatoes ALOT. Also corn on the cob. I love it!!! One of my favorites when I go out to eat is cinnamon apples although I do not have a recipe for it. I get it alot at Smokey Bones and at Boston Market.

I cube or slice potatoes and broil them in the oven. I usually toss them in oil and some spices and broil until brown. My kids scarf them - and they don't do that very often.

I broil potatoes too. They are yummy if you coat them with a little olive oil and a package of Lipton onion soup.

We also have rice, but I doctor it up with a little cream of mushroom soup. I usually put a half a can in there and it's a big hit.

You could also use any kind of pasta as a side, just doctor it up. Make a cheese sauce to go on it, put butter and parmesan cheese on it, make a gravy with a canned soup to go on it etc.

Why have I never thought to broil potatos? That sounds good.

Frozen trimmed green beans, rinsed under hot water and drained, then sauteed with a splash of balsamic vinegar until tender-crisp.

Mix of peas and carrots, tossed with a teaspoon of Mrs. Dash Table Blend.

Trimmed green beans sauteed with a couple of tablespoons butter and maple syrup, until glazed.

Carrots, peeled and crinkle cut, sauteed with a couple of tablespoons of butter, orange juice and honey, until glazed.

Sweet potato french fries.

Baby spinach, tossed with drained mandarin oranges and poppyseed dressing.

Crudites and low-fat dip.

Frozen bell peppers, sauteed quickly with soy sauce.

Egg fried vegetable rice.

Broccoli tossed with garlic and sauteed in teriyaki sauce. The roasted potatoes. Stuffed peppers!

I also do a rice with cheddar melted in and the onion, tomato and a bit of sour cream on top.

I LOVE this!! Do you have a recipe? When you say fried vegie rice do you mean like the kind you get from chinese restaurants with scrambled bits of eggs and carrots/peas mixed in?

I don't really have a recipe for it... To serve 4, I do about 4 eggs, quickly scrambled, then set aside. Then I fry some COLD cooked rice until heated through, adding in some frozen carrots/peas until they're cooked. Add back the scrambled eggs and splash with soy sauce.

The rice has cold to start for it to taste good. Whenever I make rice for dinner, I make a double batch and freeze half just so I have it handy to make egg-fried rice.

Sigh...mine too. I just cannot get it, and with all our other "issues" of allergies and stuff, I have to have picky eaters on top of it. Do you think its because they "started out" with fries and then that was it? I don't remember disliking mashed potatos...who doesn't like them really! Crazy kids!

This is the rut and I'm sitting in it too!
