Default Spanish Themed teacher appreciation gift?

Every year at the 3rd qtr we have a teacher's luncheon. I am in charge of giving/making a small token for the teachers. My original thought was a hybrid 'slice of cake' for each of them filled with chocolate. The PTA would like to do something with a "Spanish" flair. Does anyone have any ideas? I will end up making around 45 of them so they can't be to many little pieces, but I do have a Gazelle so die cutting will help, I just don't want each one to take too long to put together. Help, Please! Oh, I will need to have these done by April 5th so I don't have much time so not to detailed will help.
