Default Yay for another dinner/recipe thread, right? :)

I have NO idea what to have for dinner this weekend. I won't be home for tomorrow, but Saturday my SO is coming home after a short trip to the Netherlands, and I'd like to prepare him something tasty, but not too time consuming or hard, I'm no Master chef in the kitchen

So, what are you having for dinner today? And any good recipe's are very welcome

If you have access to fresh basil right now - this is the most awesome meal - and REALLY easy to make!

Yum Darcy, that looks delish. My SO is allergic to nuts, but it looks like I can still get away with it not adding those. Thanks, definitely bookmarking

Last night we had my favorite summer dinner. Pasta salad with a garlic pesto sauce with chicken, tomato and a little bit of bacon (because everything's better with bacon, right?!). It was so good!!

I'm a day late ... but maybe idea for the future dinner? This needs to marinate at least all day if not overnight (and doesn't hurt to have some fork holes in the chicken to let the marinade inside although it does seem to soak in)....

This is our favorite fajitas recipe ... we put in more lime juice than the recipe calls for ... and just in case you didn't know ... you can get cilantro as a dried spice! YUM YUM That is what we are having sometime this weekend....

...P.S. Don't tell Bubba, but we like it best with chicken too! ;-)

I was afraid someone would ask. I'm a little-bit-of-this-and-a-little-bit-of-that cook.

Pesto:
1 - 1 1/2 cup basil
Some olive oil (about 3/4 to a cup, usually)
Some garlic
some pine nuts (yikes. SO expensive right now)
Some parm

Blend it.

Serve over COLD multi-colored corkscrew pasta. Add in whatever yumminess you want. I fried off a little bit of bacon, then browned some chicken breast tenderloins in the bacon fat (uh, yum). I love cherry tomatoes, cucumbers, broccoli, cauliflower...anything! in mine. Sooooo yummy.
