I'm looking for low-carb, healthy recipes. I need to be eating a diet very similar to a diabetic lifestyle, so I'm looking to cut out as much sugar and carbs as I can, as well as finding good proteins.
Tried and true recipes much welcomed. I'm struggling to find things that work for families. |

Buffalo chicken
diced chicken breast Frank's Original Hot Sauce (read the ingredients, get the one that doesn't have a bunch of junk in it...the wing sauces all have HFCS, yuck) chili powder I do 2 pounds of chicken breast, 1/4 c Frank's, and 1 Tbsp chili powder. Dice the chicken, add to a gallon-size Ziploc bag. Combine the sauce and chili powder in a bowl, then dump into the bag, seal the bag, and shake it to coat the chicken. Let it marinate for about 20-30 minutes and then cook it in a skillet for 12-15 minutes. Serve with steamed or roasted cauliflower. Salsa Chicken chicken breasts, pounded to 1/2" thickness 1-2 cups salsa (I like Pace picante sauce but use what you like, just watch for added sugars) Add chicken breasts to skillet and coat with salsa. Cook until chicken is no longer pink. Serve with veggies, I like cauliflower with this, too! Mug Muffin (this is my favorite breakfast, hands-down) 2 Tbsp ground almond meal/almond flour 1 Tbsp olive oil 1 egg splash vanilla 1.5 Tbsp Xylitol, or you can use liquid stevia (I don't know how much to use) or honey or maple syrup or agave nectar 1 heaping Tbsp unsweetened cocoa powder optional - 2 Tbsp heavy cream or other liquid (milk, coconut milk, rice milk, whatever) Combine liquid ingredients (egg, oil, vanilla) in large, microwave-safe coffee mug. Add dry ingredients and stir. Microwave for 1-2 minutes depending on the power of your microwave (I usually do 60-90 seconds for a 1200 watt microwave). Dump out onto plate. You can make whipped cream by putting a full-fat can of coconut milk into the fridge, then scooping out the solids on top. Add powdered xylitol (I make mine by running it through the Magic Bullet w/the flat blade for 15 seconds, a coffee grinder would work, too) to the thickened coconut milk and stir to combine. Return to fridge for a while to thicken the mixture back up a bit. Add a dollop to the mug muffin - YUM! My favorite low-carb chocolate treat is this: 2 Tbsp coconut oil, melted 2 Tbsp unsweetened cocoa powder 1 Tbsp powdered xylitol Combine all and then pour onto a plate that's been coated with aluminum foil. Place in freezer for 15 minutes or so. It'll crack and you eat the pieces. Or you can put it into a candy mold if you prefer. Store it in the freezer. SO GOOD and the coconut oil is really good for you. Tuna salad on greens, or chicken salad on greens is always good, too. Do a web search for paleo recipes or HCG phase 2 or HCG phase 3 recipes (I know it has a bad reputation but it's grossly misunderstood, and those recipes will get you no sugars or starches anyway so it's worth a look even if you're against the diet (ETA Here's a link, ignore the serving sizes and increase as needed) and you'll find a TON more stuff.

thanks guys. Low carb, low dairy, low sugar is no fun. hopefully I can at least find a handful of good recipes.
