I am trying to get back in the swing of things since having Ava. I would like to start a weekly menu, so what do you guys like to eat? I would love some new recipes, we really like mexican, italian, and chinese food. I would also love some new dessert recipes if you have them.

Some of our go-to meals that we have regularly are:
chicken tacos beef stew stir fry (seriously THE best stir fry ever) chicken & dumplings zucchini scrambled eggs and our favorite that we do a couple times a month - Gourmet Vegetarian Delite pizza from Papa Murhpy's. LOL |

We have a lot of tacos, chili, homemade pizza, and biscuits and gravy. That's actually what we are having tonight.

Sure! It's actually pretty easy. My husband made this up. We took a class at the asian market this summer, and that's where he learned the basics. Then we have just played with it to get it how we want it.
Here are the ingredients - 1 package Rice noodles (we get these at the asian market because they are cheaper and we like the brand better, but they carry them at walmart or the grocery store) 4 tbsp hoisin sauce 4 tbsp soy sauce 4 tbsp oyster sauce 4 tbsp chili paste (be sure to check so that you don't get the super hot stuff here unless you're into that kind of thing. I don't like spicy - we use Pantai Norasingh brand in the medium-hot variety) fresh mushrooms sliced yellow onion diced 1 bag of cole slaw 1 bag of stir fry veggies chicken (this is optional... we prefer the vegetarian version, but I'm mentioning it in case you want meat in it) We cook this in a big 14" wok because it makes a LOT. I should mention that we use low sodium versions of all the sauces when they're available, but that's a personal preference. 1. Soak the rice noodles. We like to soak them longer than the package indicates. At least 30-45 min. 2. mix the 4 sauce ingredients together and set aside (hoisin, soy, oyster, and chili paste) 3. sautee onions and mushrooms in 1 tbsp oil (we like coconut oil) 4. add in stir fry veggies and 2-3 tbsp of the sauce mixture. Stir continuously until veggies are cooked. 5. drain noodles and add to the veggie mixture. Jeff adds a few noodles, a little sauce, stirs, more noodles, more sauce, stir, etc. So that it's all mixed up evenly. Continue until you've added all the noodles and all the sauce. 6. These really don't have to cook very long. Maybe a couple of minutes - just long enough to get the noodles all covered in sauce. When the noodles are just about done, you can dump the bag of cole slaw in. Stir it all up. The cole slaw cooks FAST. When it's done, you can turn the heat off and enjoy! This is seriously one of our absolute favorite meals! |

For easy meals we do:
crock pot pulled pork sandwiches crock pot chicken tacos (leftover meat is used for enchiladas) homemade pizzas baked potatoes (crock pot) and leftover pulled pork as a topping. grilled chicken bree and pesto sandwiches asian lettuce wraps broccoli and beef |

Here's one I make a lot because I can keep everything in the pantry:
Tuna Tomato Pasta 8 oz. tube pasta white wine 2 tbs. butter salt/pepper to taste garlic to taste 2 Tbl. Olive or vegetable oil 2 cans diced tomatoes ¼ cup Parmesan cheese 1 package tuna Cook pasta according to package directions. Meanwhile, sauté garlic in butter in a large skillet. Add tomatoes and tuna. Add white wine and seasonings to taste. Drain pasta and toss with olive oil while in drainer. Add pasta to sauce in skillet. Toss in parmesan cheese and heat through. Enjoy! (I also add in fresh oregano or basil if I have it. Italian seasoning is tasty too!) Bruschetta Chicken is another favorite around here.

I have a 2 week meal rotation with these categories:
Week 1:
Week 2:
I then vary the particular recipes for seasonal foods. I also vary the type of foods within a category (like enchiladas, fajitas, tacos, burritoes) In the warmer months I might also switch out the main dish salad for another soup or pasta.
