Slip ins are a full overlay that goes over your photos, so it has the plastic-y sheen of a page protector over your photos as well as the border between sections. Plastic stitched grids only give you the page protector look as a border between sections without covering your photos. Some people feel the first look is more realistic, some people prefer the second because the full overlay can make the colors in your photos a bit less vibrant or can hit your photos wrong (with a "glare" in a place you don't want it.)
